Peppermint Crisp Ice-cream
« on: October 15, 2014, 10:26:49 am »
Peppermint Crisp Ice Cream
500 mls of thickened cream
200 mls milk
200 g sugar
100 mls of mint liquor, like Creme de Menthe.
2 Peppermint Crisp Bars, chopped with knife into shards

Method
Place sugar into TMX bowl and grind Speed 10 for 10 seconds. Scrape down.
Add cream, milk and mint liquor.
Mix speed 3 until sugar is incorporated. About 30 seconds.
Churn in Ice Cream machine until soft frozen, adding Peppermint Crisp in last minute of churning.
Freeze.

This will not freeze hard because of the liquor.

CP,  I buy a stack when they are cheap.  Have to hide them from Ral. Also buy flake and Turkish delight bars when cheap.
When we had the Woofers here I made ice cream for every meal.  This was voted the favourite then the Chocolate and Mars Bar one.

That looks so refreshing and cooling.  Wish I had an ice cream maker! ... well, perhaps it's best I don't; with a dairy intolerant DH I would have to eat it all myself and I have already had one over weight scare so I must behave!  I will just drool all over my keyboard instead.
