In my book they are using calrose rice for making rice cakes. I will try both calrose and aborio.

I think any short grain rice would do.

I made the recipe that CC posted using calrose rice.  It worked well and they are pretty tasty.  Now that I have a bit of an idea how to do this I will try some variations.  :)
