Laura's Healthy Hollandaise

Gluten free, egg free, dairy free, vegan, and to me, tastes better than normal hollandaise!

I've been dying to share this new concoction, but wanted to test it several times to make sure I got it just right.

Name of Recipe: Laura's Healthy Hollandaise
Makes 1.5 cups, seems plenty for 4 people
Ingredients:
70 g raw cashews
150 g water
30 g olive oil
30 g lemon juice (~juice from 1/2 a large lemon)
10 g mustard (I prefer the flavour with grainy mustard, but if want it to look like "normal" hollandaise then use dijon)
1 1/2 tbsp nutritional yeast (note: NOT the same as regular yeast you'd use for baking)
1/2 tsp apple cider vinegar
3/4 tsp salt
1/2 tsp cayenne
Generous shake of paprika (I used smoked but regular would be fine)

Preparation:
1. Grind cashews speed 10 for 10 sec, scrape down, then speed 10 for 10 more seconds
2. Add other ingredients and blend speed 6 for 30 sec, MC on
3.  Thicken temp 80 for 5 min speed 2.5 MC off

Tips/Hints:
My new favourite breakfast is this sauce with poached or scrambled eggwhites over a bed of sautéed spinach.  No more longing for eggs Benedict (which is delicious but for me leads to gut-wrenching agony)
Also really yummy over salmon, would be great with a steak too!
This keeps well in the fridge, just warm in the microwave or stove adding a little extra water.

Sounds great, I have printed recipe for next weekend ... I hadn't heard of nutritional yeast before, where do you buy yours?

Laura, it will probably be Easter weekend before I give this a try, but will let you know.

KMW, nutritional yeast is readily available in health food stores, these days you willl probably even find it in the health food section of the supermarket.  Its appearance is actually more of a flattened 'flake' (no, not the chocolate kind!) than anything else and is used to give a slightly cheesy taste to the dish.

I get mine in the grocery store in the health food section. It's the secret ingredient in many of my best recipes, gives a cheesy buttery flavour and is apparently quite good for you!

Just tried some leftover sauce (thinned with a bit of water) over gluten free pasta and it was like a delicious but healthy alfredo sauce.  Would have been lovely with some seafood mixed in mmmmm

I have finally got round to making this!  Unfortunately I mis-read the recipe and put in 1 1/2 tsp of yeast flakes, instead of 1 1/2 tbs!  Anyway, the sauce was a bit runny at the end which was when I found out my mistake so added approx. 1 tbs more and cooked again to end up with  much more acceptable consistency and  very tasty sauce.  Had a bit of cashew cream left over from another recipe and added that as well, so plenty for me to pig out on over the holiday weekend!
