Meat packing around blades - wrong speed?

Does anyone have any good tips on how to avoid meat and minces packing around the blades when cooking? I've had this problem with several kinds of meats, but mostly minces and shaved meat. I usually run it at speed 2 reverse in order to not pulverize the meat and I've also tried the normal direction.

I would really appreciate any good tips here as I'm a bit stumped. I'd rather not increase the speed - I'd actually want to reduce the speed so that my meat sauce, for instance, would have bigger lumps of meat in it.

mince can be turned to mush, especially the store bought type. If I make mince for spaghettie bolognese I try not to over pulverrise and make it more chunky so it doesn't break down as much during cooking. as for packing around the blades I don't know, unless you stop the machine to check and stir manually to loosen up food that has been caught under and around the blades.

I've thought about stopping and unpacking it, but that can become a chore pretty quick with my 8-10 hour pasta sauce ;)

When I cook mince now in the TM I put it in the basket with the sauce below.

Hmmm...that's a really interesting tip! I just need to find out how much it holds. I usually aim for 2kg of mince and 1kg of tomatoes ;)

I've only done 500g as only really cooking for 2.  I kilo of mince I think would be ok not sure about 2kg.

How does the thermomix cope with 2 kg mince and 1 kg of tomatoes? Is it above the 2 litre mark?
May all dairy items in your fridge be of questionable vintage.

Had to use low speed, but it worked ;)

EDIT: Oh, and it could be some water weight as well. Don't know about now, but there was a lot of controversy some time ago about companies adding crushed ice to their mince...

I made a really good chicken curry last night and for cooking - used the butterfly, speed 1, reverse. I cut the thigh fillets into quarters, nothing stuck under the blades.

Tonight I made the pasta sauce below in the jug, and varoma had the mince. When it was done, I removed half the sauce (it was at the brim!) and put the mince in, for a few seconds on speed 3 and watched it closely. The result was as per saucepan.
