The second link works for me DJ as I'm not on Twitter.  This looks good to me, I have all but the parsnips on hand so once it cools down a bit I'll give this a go, cooking only 1/2 quantity.  Love beetroot so will use it.  Thanks DJ, it sounds interesting.

Both links worked ok on my ipad, I don't use twitter either. I hate parsnips with a passion, I would have to substitute those for something else.

Sounds good to me DJ.  I'll put this on the to do list for when the weather cools.  I  love parsnip and will probably leave out the beetroot.  We like it cooked but not keen on it raw.

Jeninwa, I love parsnips as much as you hate them. I remember as a child my mum would cook them with carrots and then roughly mash them and I still occasionally do this. DH says I have some strange combinations (strawberry jam and cheese for instance).

Troupie I often do parsnip and carrot mashed together, with lots of pepper. I also love jam and cheese. Have you ever tried fruit cake and cheese? Sort of the same as the jam and cheese. It has to be a very fruity fruit cake.
May all dairy items in your fridge be of questionable vintage.

Cookie, I love fruitcake and cheese but didn't mention that one; didn't want you all to think I was a bit of a fruitcake, DH does when I have that for my morning tea.

Made a similar one tonight with 1/2 cup green lentils cooked first. Lots of veg in with beef mince too.
On top sweet potato, swede, carrot and potato.
It was a hit, you'd never have known it had lentils in. Even DD liked it.
