Quinoa Tabbouleh - KIS p101

I'm still getting used to quinoa myself (this is my second salad). Everyone loved it. This recipe is great as the ingredients are in the cupboard, and we have a full veggie patch of parsley. When its in a bowl it doesn't look like there is much there, but it is very filling and would feed approx 6 people.

I made this a few days ago, but forgot to post my review.

I don't really like tabbouleh, but the in-laws where coming for lunch and they all love it. My MIL used to make traditional tabbouleh all the time, but not so much now as she eats gluten free.  I know she likes quinoa, so I thought I give this salad a try.

It was easy to make and they all loved it. My MIL appreciated the effort I'd gone to which is always a bonus!

I substitute quinoa in my tabbouleh all the time and everyone has lived it. Shane Delia has a great tabbouleh using pistachios and green olives which I've made a couple of times and it everyone has loved it.

I've only ever had quinoa in soup, one day I'll try it some other way. That looks very nice Katie - I do love tabbouleh.

I love this salad and made with quinoa instead of the traditional way is a nice change.  I made 1/2 quantity.  I might even add some mint and cucumber next time as in traditional recipes.
