Spanish Rice

Name of Recipe: Spanish Rice
Number of People: 1 large serve or 2 small
Ingredients:

small clove of garlic
30g spring onion (cut into 3cm pieces) or half a small red onion cut in half
1 tblspn olive oil
110g long-grain rice
1/2 tsp paprika (or more to taste) - you could use chilli powder
375mls hot chicken stock - add more if you need it at any stage of the cooking or at the end if you feel it is too thick.
60g chopped tomato
65g diced, cooked meat (I used pickled pork 1cm dice)
40g roasted red capsicum diced 2cm or use fresh capsicum in stage one with the onion and garlic.
2 tblspns chopped parsley
S & P to taste

This is very tasty.


Preparation:

With the blades running at speed 5, drop the clove of garlic onto the blades.  Immediately reset and chop onions and garlic 1 sec/speed 5.

Add olive oil and cook 2 minutes/100o/reverse/speed 1.

Add rice and paprika (or chilli powder if using).  Cook 3 mins/100o/reverse/speed 1.

Add hot chicken stock, diced tomato, S & P to taste and cook 15 mins/100o/reverse/speed 1.

Add parsley, meat and roasted capsicum.  Heat through for 1 min/100o/reverse/speed 1.

thanks JD, always good to have a tasty recipe that doesnt make so much that you have to eat it for the next 7 days

It's a handy littler ebook Judy.  I am trying to reduce leftovers a bit in our house. DH says he is sick of eating them. Last night I made a small veg lasagne and we ate it all and could have done with more. It is so hard to get it exactly right.
May all dairy items in your fridge be of questionable vintage.
