Review of Almond Tuile Baskets page 101 QFEC
« on: September 24, 2013, 05:11:54 am »
Now these really tested me and I found them very time consuming.  I improved my technique as I worked my way through the mixture though and for visitors, it is well worth the effort.

It pays to only bake 4 tuiles at a time as they go off so quickly and in my oven 8 minutes in the centre of the oven was just right.  I found a heaped tablespoon of the mixture was sufficient to spread out as far as the recipe says.  If you have it too thick, it just doesn't work and will crack when you lay it over the dariole mold.  I found the Nestle mold the best one to use, I tried small ramekins but you don't get a nice shape with those. You can see from my picture there are quite a few different shapes, some good, some not so good.  No matter what though, they taste lovely so will not go to waste.  I made the lot into baskets and have stored them in my largest Tupperware container so I will report back on how long they stay crisp.

I'm sure they were worth it Judy. The lavender icecream looks so lovely in them.

Still crisp, just breaking pieces off now and then to go with other desserts or to have with a cuppa.
