Healthy Spelt bread recipe

Hi all Thmx addicts,

Does anyone have a healthy  recipe version of spelt bread that doesn't use bakers flour.

No worries.  Apparently the spelt wraps from this blog are very nice also.  A friend of mine uses them as tortillas when she is having mexican.

Hi Elie,
I'm Jo (from Quirky Cooking) and thought I'd let you know that my favourite spelt bread recipe is the one called 'Wholemeal Spelt Challah': http://quirkycooking.blogspot.com/2009/01/challah.html

I use this recipe for all my bread and rolls now, as the eggs make it really soft on the inside - and I brush with water and sprinkle with sesame seeds, so it's nice and crusty on the outside.  This recipe makes two loaves at once, (or a batch of bread rolls, and a loaf of bread, which is what I often do - the bread rolls are ready quickly, and then there's bread for later).  I also knead it for 3 minutes now, instead of 2, adding more flour through the hole in the top if necessary as it mixes.  (Just poke the dough with your finger to see if it's too sticky.)
