Cottage Cheese Patties

Cottage Cheese Patties

INGREDIENTS

1 large onion cut in quarters
500gms cottage cheese (I used low fat)
2 cups of boiled rice
1 egg
1 pkt leek and cheese soup
2 tbsp of plain wholemeal flour
70gms rolled oats
egg wash
multigrain bread crumbs

METHOD

*Chop onion on sp6 for 5 secs
*Add all the remaining ingredients to the  *: except egg wash and crumbs and combine  :-: sp4 for 10 - 12 secs (this will be a moist mix)
*Refrigerate for 1 hour.
*Form into patties - refrigerate again for 1/2 hour if necessary
*Dip in egg wash and coat in bread crumbs
*Refrigerate for 1 hour
*Heat a tbsp of oil and gently cook about 6 mins each side or until golden brown

Makes 16 man sized patties. For lunch boxes form into balls using a small scoop - makes heaps

Tip: You need to work quickly with the mix and refrigerate as necessary - it is a moist mix and a bit fiddly.

I have no idea where the recipe come from, I have been making it since before kids and know they loved them in their lunch box. My recipe is hand written.

These look great Mich ;D What do you serve them with? I imagine they might be nice with sweet chilli sauce :D

Usually just cold on their own. Chilli sauce would be nice with them - DH would like that.

Sound good.. We make a similar recipes but not the same quantities and with french onion soup..i love them :).

I think baking them in the oven is a great idea Amy. Do you think these would work with ricotta, or would it be too sloppy?
May all dairy items in your fridge be of questionable vintage.

Thanks Cookie :D Is ricotta sloppier than cottage cheese? I did find that they were very fragile to flip with the baking method, but I don't know how it compares to frying because I didn't fry any. Mich might have a better answer ;)

Depends amy.. Normally commercial ricotta ie in a tub are more liquid but other forms from the deli can be alot less liquid

I think a firm ricotta would work.
I couldn't find cheese and leek soup when I went looking for it. May have to use Frozzie's version of French onion soup.
I'm going to try them in the oven next time - excellent idea Amy.  :D
