Spiced Yogurt Marinade

Ingredients, Martha  Stewart Recipe
Enough for 6lb chcken, i will make 1/2 for a 1.75kg chicken

1 cup plain yogurt
3 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
1 small onion, chopped (1/2 cup)
1/4 cup packed fresh mint
4 garlic cloves, chopped
2 strips lemon zest (each 2 inches long)
1/2 teaspoon ground cumin
1/2 teaspoon hot paprika
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger

Directions

Place all of the ingredients in to TM & blitz. Use immediately, spreading the mixture on the chicken skin.

I chopped the onion, garlic & mint first, then added the remainder of ingredients.
I also added 1/2tsp dark brown sugar

Cook's Note

This marinade works best with a whole chicken cut into pieces or bone-in, skin-on pieces. Marinate the chicken overnight, and then roast, still coated with the marinade, in a 375-degree oven.

I have not made this yet, but have just taken a whole chicken out of the freezer.

Thats what I thought JD, i have all the ingreients.
Mint is in the garden, i might reduce the amount, I find home grown very minty.

1/2 the recipe is enough for 1 chicken. I took the skin off the breast but left it on the other pieces.

This was really nice. Next time I would 1/2 my breasts to get more coating. I think this would work really well with kebabs. DH loved it so much he ate 1/2 of it & the remainder is going to work for lunch. A great way to use up excess yogurt :)

Made the marinade about a week ago, used chicken breast to make kebabs, froze them, defrosted & cooked on bbq, really good, served with fried rice & green salad.
