Peanut and Caramel Choc Chip Biscuits in a Jar

This recipe comes from a book called "Gifts for the Cookie Jar" by Lia Roessner Wilson.

Makes 4 dozen biscuits.

Ingredients for the Jar:
100g white sugar
100g brown sugar
225g flour
1/2 teaspoon baking powder
3/4 teaspoon bicarb soda
1/4 teaspoon salt
110g salted peanuts
50g coconut
200g caramel choc chips

Instructions for the Jar:
1. Place the brown sugar in a 1L jar, and press down evenly.
2. Pour white sugar over brown sugar.
3. Sprinkle peanuts over sugar, and press down.
4. In a mixing bowl, stir together the flour, baking powder, bicarb soda and salt. Pour half the mixture over the nuts, pressing down firmly.
5. Pour choc chips over flour in jar, and top with remaining flour.
6. Place coconut on top of the flour and press down firmly. Place lid on jar.

Instructions for Baking:
1egg
125g softened butter
125g peanut butter
Extra sugar

1. Preheat oven to 180C.
2. Empty contents of jar into a large bowl and add egg, butter and peanut butter.
3. Beat on low speed or by hand until mixture comes together.
4. Roll heaped teaspoons of mixture into balls and place  8cm apart on a biscuit tray.
5. Flatten with bottom of a Glass, dipped in sugar.
6. Bake for 10 - 12 minutes until edges are browned.
7. Let biscuits cool on tray for a minute before transferring to a cooling rack.


Instructions for making in a thermie:
1. Place egg, butter and peanut butter into Bowl of Thermie and mix on speed 5 for 10 seconds, or until combined.
2. Add all the other ingredients, and mix on speed 5 for 5 seconds.
3. Use the Knead/ Interval setting until the mixture comes together.
Refer to steps 4-7 above to from and bake biscuits.


These are a very sweet, crisp biscuit. I found them to be overly sweet, but other friends have found them to be delicious.

We love caramel chips in biscuits. I might try them and reduce the sugar by half.
May all dairy items in your fridge be of questionable vintage.

Thanks ES, another great idea. Will be making a gift jar of these on the weekend.
May just use brown sugar and leave the white sugar out all together if you found them too sweet.

I'm not in Perth but picked up caramel chips from WW in the same places chocolate chips.

Must give these a go and if they work out nice - which I am sure they will, they'd make a great gift at Christmas time (URGH the dreaded "C" word  :o :o ) to have when unexpected people drop in.

Thanks Brumington; I will try them next shopping day. Years ago when choc chips first came out in a little box we were also able to get butterscotch ones but it seems they were so nice they stopped making them.

Thanks for bumping this thread.  Since I was blown away by one of these which was KimmyH's lucky dip contribution at Cookie and Ral's whilst CC was over, I have been thinking of making something like this for Xmas gifts.

Thanks very much.  Also, I hadn't thought of googling for ideas as well (spend all day on the computer, but not very good at thinking along the lines of using it like a reference library).  CC also posted some ideas / links last year so, one way or another, this should keep me occupied closer to Xmas!
