I made this tonight and it was lovely.  Amazing how you can make something so tasty and substantial from a few ingredients.  I was surprised how the rice cooked in the pie and how it solves the problem of any liquid coming from the zucchini. I would never have thought of doing that.

I served it with the corn, pancetta & chives dish from Quick Fix in the Thermomix and a green salad.
I think I over did it on the portion size and now I feel very full  Roll Eyes

Made this for dinner last night and it was so tasty.  Had it with veggies from DGD's garden. The zucchinis came from there as well.

We had this for dinner tonight was very very nice - as my DH says, you cant go wrong with anything wrapped in pastry. I would add more onion next time and lots of pepper but definitely a 'make again' dish

It was quite some time ago and I really can't remember if I did freeze the leftovers Uni.  I can't see why they wouldn't as I do freeze my spinach & rice pie although that doesn't have any pastry.  I don't think it made a huge pie so we would have eaten it over 2 consecutive meals I would have thought.
