Picked my first zucchini for the season today  ;D ;D ;D
So have marked this recipe to try as I can see many many more coming on!!  :)

I made this tonight and it was lovely.  Amazing how you can make something so tasty and substantial from a few ingredients.  I was surprised how the rice cooked in the pie and how it solves the problem of any liquid coming from the zucchini. I would never have thought of doing that.

I served it with the corn, pancetta & chives dish from Quick Fix in the Thermomix and a green salad.
I think I over did it on the portion size and now I feel very full  :-))

We're having this during the week. I can't wait to receive the book. It arrived during the week, but DD said I had to wait until Christmas.
May all dairy items in your fridge be of questionable vintage.

Made this for dinner last night and it was so tasty.  Had it with veggies from DGD's garden. The zucchinis came from there as well.

We had this for dinner tonight was very very nice - as my DH says, you cant go wrong with anything wrapped in pastry. I would add more onion next time and lots of pepper but definitely a 'make again' dish

Perfect dinner for my working days, can prepare this in advance and warm it up as we get home.  Family enjoyed this, thank you JD, would be a regular.

It was quite some time ago and I really can't remember if I did freeze the leftovers Uni.  I can't see why they wouldn't as I do freeze my spinach & rice pie although that doesn't have any pastry.  I don't think it made a huge pie so we would have eaten it over 2 consecutive meals I would have thought.
