Made these today. Made 12 large muffin size cupcakes and brushed tops with lemon sugar glaze as per maddy's suggestion. Heavier than a cupcake but very nice. Thanks.

I've made these today and in my haste forgot to add the oil. The mixture tasted nice so hopefully the cupcakes will be edible. I think I'll give a coating of lemon/sugar syrup when they come out of the oven and maybe ice later on.
