Sugar Free Oil Free Banana Bread

There seems to be a bit of plethora of banan bread recipes here but thought I'd add this one. It's my first recipe post so hope it's all ok! I'm a bit of a marathon running health nut so this is therefore pretty much a guilt free loaf full of goodness.

Sugar free Oil Free Banana Bread

¾ cup dates, pitted and chopped (120g) - or use any combination of sweet dried fruit like apricots, sultanas – change it around!
Small handful of nuts (30g)– almonds/walnuts/pecans/sunflower seeds – whatever you have
Tablespoon chia seeds
¾ cup boiling water, 170g
½ tsp baking soda - bicarb to some
2 ripe bananas
2 eggs
1 ¼ cups wholemeal flour or whole spelt flour (185g)
½ tsp cinnamon
1 tsp baking powder

Preheat oven to 175oC and grease and line a loaf tin with baking paper.

Place dates and nuts and seeds in thermomix and chop on speed 8 for 6 seconds.

Add water and baking soda and leave to soak a few minutes.

Add bananas and mix speed 6 for 8 seconds.

Add cinnamon, eggs, baking powder and flour and mix 20 seconds speed 4 or until combined.

Transfer to tin and cook for 45 minutes until just done (or it will dry out). Delicious still warm or toasted too.

Very easy and versatile. Substitute ingredients to mix it up. This is really healthy and yummy. Try not to eat the whole loaf yourself!

It's lovely to have something that you can eat without feeling too guilty. Then you can have 2 pieces instead of one.
May all dairy items in your fridge be of questionable vintage.

Do you think this recipe would be ok for some one with gestational diabetes ?
My sister has just found out she has gestational diabetes, thought I could make something like this for her

This looks great - I'm defiitely going to give this a go. Maybe it's just me, but I found it kind of hypocritical that banana bread/loaves/cakes had so much sugar and oil - to me, it kind of defeats the purpose...

I found this recipe whilst transferring all the comments recently, printed it out then and there and have just made it for the latest challenge. Not sure how big the tin should be but I used an 11 x 21 cm tin and had to cook it for 1 hour. Followed Soph77's instruction not to overcook it and it's nice and moist.  I had a slice whilst it was still warm and I enjoyed it with 1/2 tsp butter.

I used the wholemeal flour option and didn't bother chopping the dates (the TMX did that for me in the first step).

A good one for those cutting down on calories but don't expect a sweet bread.
