Review of Caramelized Apple Risotto. A Taste of Vegetarian

I have made this quite a lot and always forgot to review it. It is very nice, and of course appley.
I reduced the total content of the sugar in it to 50g as I think this makes it quite sweet enough. Unless we are having guests I don't bother with the Caramelized topping. I used darker apple juice for this one hence the dark colour. Oops, I forgot I also added a teaspoon of vanilla paste this time.

yeah, I've made this several times and love it.  

I blitz up the apple into chunky-ish pieces before cooking.

I also use 75% juice, 25% water so it's not quite so sweet.  And yes, less sugar.  In fact, I only put sugar in when cooking the apple and that's it.

I have made this often, I make it as a breakfast dish often as well  :-[ :-[ I was sure I posted a review somewhere but anyway we love it.

I make my own apple juice with 1 apple, ice cubes and a small amount of water, blitz on speed 10 for about 30 seconds or so, set aside and them make up the rest with water when adding it to the recipe.

Only ever add the one lot of sugar when it is cooking if using it for breakfast and omit the mascarpone cheese, but serve with natural yoghurt  :)

Thanks for the tip about the apple juice. I'll do that next time. I'm being very bad at the moment and eating the left over mascarpone with the risotto.
