Tomato soup using canned tomatoes

Name of Recipe: Tomato Soup
Number of People: makes 2 litres
Ingredients:

1 tsp Tenina's caramelised garlic paste - from For Foods' Sake
100g caramelised onion
1.5 tsp salt
2 tsp sugar
3 x 400g cans crushed tomatoes
400g can of water
3 tblspns Tenina's chicken stock powder - from FFS

500g milk (or 1/2 milk, 1/2 cream for cream of tomato soup)
S & P to taste

Preparation:

Place all ingredients except the last 2 into the TM bowl and cook 60mins/100o/speed 1 removing MC and placing the steaming basket on top of the lid.
Blend 30 sec/speed 8.
Add milk and blend a further 30 sec/speed 8.
Taste then season with pepper and extra salt if needed.

Tips/Hints:

If you have no garlic paste or caramelised onions, just chop a few cloves of garlic and a large onion and cook 5 mins/varoma/speed 1 before adding the other ingredients in step 1.  
You can use vegetable stock in place of chicken stock for vegetarian option.

JulieO - Made this as I had already made caramelised onions earlier in the day and had everything else.
Used 480g milk and 20g cream just for a hint of creaminess.  My only change next time would be to reduce the chicken stock granules to 2 tbs instead of 3 (just a personal taste).

Blue Wren88 -  made it yesterday & it was just lovely...smooth & creamy.
I used half milk & half cream & couldn't have been happier.

CP - I used full cream milk. Lovely soup.

runnybabbit - I usually add some spinach and ricotta fresh pasta into the soup to make it a fuller meal. Also if you don't have caramelised garlic paste handy, we use Odette's Onion Jam from Super Kitchen Machine in smaller quantities, just takes an extra 15 minutes before starting the soup. Lovely recipe and so good for our budget.

jimgurn -  reminded me of the lovely Heinz Cream of Tomato Soup I used to have as a child back in England.....only much better.

Moo 2 - I  made it with the suggested garlic cloves and onion as I don't have FFS (sob) and it worked out beautifully.

DJ - Made this, it is a hit. Thanks. 3 portions cost almost same as 1 portion Heinz cream of.

Violin Cuddles - I used 3 tsp chicken stock concentrate and left out the salt and since we eat it with grated cheese and cracked black pepper, it doesn't need any further seasoning. It's excellent.

teagg - Really, really, really, REALLY good soup. I used just garlic cloves and onion. I substituted 680g passata for one of the tomato cans & water. I used two big blobs of EDC vegie paste and used some leftover sour cream with skimmed milk at the end.

Wow,  Judy,  this would work out at about 50 cents a cup.   Will try it as I buy Tinned Italian Tom for about $1 a tin.

JD what does it aste like, tinned cream of tomato soup or tinned tomatos blitzed with a few herbs & garlic.

Ds loves cream of but not the the other. This would  be great for our cheap night meal.

I had quite a few tins of tomatoes I got for 49 cents Chookie and with tomatoes being so expensive at the moment, there is no way I would be using fresh. I had made a batch of caramelised onions so I just continued on from there without washing the bowl - it was just so cheap to make and DH, who is not a tomato soup lover, was seen licking his mug out :-))

Hally perhaps you could do 1/2 batch and to make it creamy for DS, use 1/2 cream and 1/2 milk perhaps. I would have if I had cream but some woman has got me on a grocery challenge and I wasn't allowed to buy cream seeing as I was already over budget this week  ;D

I think it's a recipe that could be played with, some might like to add some herbs as well.

Great looking recipe JD- I bought some 800g tins of roma tomatoes on special the other day for $1.50 each so I'll give this one a go. My kids dont like eating tomatoes on their own but love tomato soup.

Thanks Judy will give this a go.

I have a question which has perplexed me for ages.  I quite often see recipes asking for 2 x 400g tins of toms (chopped, crushed whole etc).  Why don't they ever say 1 x 800g tin which are readily available?  ???

Good question- I don't think there's an answer to that. Maybe people stock 400g cans more than the 800g? I know I always stock both sizes.

Same here JO, I always buy the 800g but I do wonder why they specify buying 2 cans ???

I only had a little taste as I made this purely to freeze in portions for DH to take to work. Really, really liked it and could imagine it going perfectly with sliced toasted baguette with cheese melted on top to dip in.

Thanks Julie, hope DH likes it.

I always only buy the 400g sized tin of tomatoes, always when they are on special.  It is not often I need more than 1 for a recipe so I'd be stuck with 1/2 a can if I bought the larger size.

I made it yesterday & it was just lovely...smooth & creamy.

Served with fresh bread straight from the oven...what more could a girl want? :D
