 :P Yes, I call them 'pattycakes', not cupcakes.

This was originally a food processor recipe, so converts well to the Tmix.

Place in bowl:

220g softened butter
3/4 cup (150g) castor sugar
1 1/2 cups(240g) SR flour - I have successfully used plain flour with 2 t sp of baking powder
4 eggs

You can dump the whole lot in and mix for about 3 minutes on speed 4.
But I prefer to do it this way:
Mix the butter and sugar at speed 4 for 3 minutes. Scrape down frequently.
Add eggs one at a time and mix for 30 secs each - scrape down between additions.
Add sifted flour and mix on speed 2 for 30 seconds or until incorporated. I now use the  :: setting for adding flour to cakes. Mix for about 15 - 20 seconds and use spatula to assist.

Bake at 180oC, fan forced for 15 minutes. I use an ice cream scoop to fill the patty pans. Makes 16.

Amanda - I just made these and they are lovely. I added 1 tsp of Queens Vanilla Paste. If I wanted to make them chocolate I would sub 1-2 Tbsp good quality cocoa for same amount of flour.

ralo - These are great though mine needed 30 minutes to cook.

brazen - great recipe and converts well to being gluten free!!
Just wanted to note that I made these yesterday with GF flour and lots of vanilla but forgot to put the baking powder in - they are even better than usual without it! yum!

CP -  had a half success today - one batch rose, and then the second batch rose and then sunk to a level top. Am still getting used to my new oven perhaps...

Jabba - I made these and they turned out really well. I needed to mix for about 2 min to incorporate the flour - and used the spatula.  I made 12 cakes in large patty cake papers (in muffin trays) and in my oven, cooking time was closer to 30 min.  Delicious!

darls - I made 50 cup/pattycakes and all were gone. My boy said it's the most yummiest! I did two batches with small paper cupcake, using green icing on top and 5 smarties as 5th bday.

simplyrhonda - Made these, the loved them. Delicious & easy.

maddy - Nice and easy MJ. I added 50g coloured splinters in with the flour too.

WAThermoFamily - thanks Meganjane these tasted great!  Even so good that most were eaten before I got time to ice and decorate.

AmandaN -  I have used egg replacement as my younger son is allergic.  The cupcakes out ok.  They were a little drier than cupcakes with egg but I didn't expect them to be exactly the same anyway.  A couple of them (slightly larger) broke when I removed them from the tray, but hey.....they were the commission ones that I got to eat!  They rose well and dropped a little in the middle, so with icing they were pretty much flat across the top.  I then added 5 mini-marshmallows (his 5th birthday), and you don't notice at all.

Lisa J - Thanks for this recipe, they were lovely. Made a second batch and stirred crushed Oreos through the batter and they turned out even NICER!!

em - thanks mj for a great and simple recipe.  I love the recipe, the batter is so fluffy and when cooked the patty cakes are beautiful and moist.

cottchick -  they are fantastic and too easy for words. I just threw all the ingredients in in no order, forgot the baking powder, still they are just perfect. THANKS!

I just made these and they are lovely.

hubby and I did them together - took about an hour I'd say - not too long, this year. We've had some birthday cakes which have taken hours and hours :)

I cook them in a pretty hot oven. When I say 'fan forced', I mean I put my super fan on, which is a high heat one for my oven. I'm guessing the temp is more likely to be about 200 C

Only cook on high heat if filling pans to nearly full - then you'll get the high peaks. If using an ice cream scoop to fill pans, then cook at 175 - 180C only.

I tried this yesterday for my 'baby' to take to his Kindy for his 5th bday. Ive had 50 cup/pattycakes and all were gone. My boy said its the most yummiest!

I did two batches with small paper cupcake, using green icing on top and 5 smarties as 5th bday.

So thanks for that! :D

Now I need to search for a great batter for general large bday cake to make for party tomorrow as my kids (two of my kids have bdays within a month so usually share their bdays together with family) requested a cake shaped as a dog!  :o

Darls, that's easy peasy.  Use the Bimby Chocolate Cake - lots of people have used it for large birthday cake.  It does make a big cake.

Forgot to come back here to say thanks for the recommendation on using Bimby Choc Cake...

I've baked two batches into two tins and cut it up into this:

It was all gone within 2 days. Quite delicious! So thanks again! Am going to make it again for my DD who's turning 8 next week!

Great Dog cake and glad the Bimby Chocolate Cake recipe worked well.

We made a batch of the Patty Cakes on the weekend as DD wanted to make Fairy Wing Fluffies (those butterfly cupcakes) for her Dads birthday.  DD wanted to take them away to the beach with them.  He brought most of them back today - just to throw in the bin  :-X >:( (unappreciative b.....). Glad DD didn't see that!

Thankfully she only took part of the batch and i have the rest frozen to use another day.  ;) ;D

I have a batch of these in the oven atm.  Cupcakes for DS preschool for his birthday on Wed.  I have used egg replacement, as my younger son is allergic.  He is alright with 1 egg in things like meatballs, but I wasn't willing to risk 4 eggs!

Mind you DS2 (the egg allergic one) is just really not a cake fan, and he just had a nibble at the edges.

For the family get together for DS1's birthday on the weekend I am doing the ILB chocolate cake and I will try to make a rocket out of it.  Currently in the oven using the egg replacement stuff.


ETA:  ARGGGGHHH!!!!  Cake came out of the oven and I let it sit about 5-10 minutes then went to turn it out to cool on a rack, it wouldn't come out at first, so I gave it a tap........and it came out, welll.......half of it came out!  Its not stuck.....I think I should have let it cool totally maybe???  So I have to make another one....and you know what...I don't have enough sugar left!!!!

I've just had to re-visit my recipe as I lost all my recipes when my computer crashed. Thank goodness for this forum and my blog and also the fact that I have most printed off and placed in display folders - take note everyone!!

I must convert this to weights. Will do so today.

Also, another point with cakes. I find the best way to incorporate flour is to use  :: setting.

somewhere in the dark recesses of my mind, a handy hint has come to the fore if this happens: Put the other half in its rightful position and place a damp tea-towel over the top and just sort of hold there for a couple of mins. I'm guessing the steam and the tea-towel help to knit it back together???

PS. I'm a great advocate of baking paper  ;)

I baking papered effort No 2 and it turned out a charm!  Made it into a rocket cake (I will upload photo at some point).  So artistically creative!  Just cut the corners off the slab and make them into the fins/stands at the bottom.

The botched effort No1, I just cut off the salvagable edge parts and took them for playgroup morning tea.  Tasted really good!

thanks mj for a great and simple recipe. mr 3 yr old and i had fun whipping these up this afternoon and decorating them.  i love the recipe the batter is so fluffy and when cooked the pattycakes are beautiful and moist.
btw a tip i could have used prior to making these, dont whatever you do drop half and egg shell into the tm when the blades are spinning cause it takes quite some time to pick all the bits of eggshell out of the batter  ;) :P :-X

Whoops!!

I always crack my eggs on my upturned MC and drop it in. That way I can pick any shell out of the MC before putting it into the main bowl.
