Hi everyone,
Just wondering if anyone has a recipe to make a cereal bar like the Heinz cereal bars. I dont think they would be that hard to make but just need some ideas on what would work to make the recipe.

Mandi are these like a cakey/biscuit with a fruit filling? Too long since I had little ones eating things like this but could be a good option for mine if we can work something out ;)

I think they are kind of a biscuit outside with the fruit in the centre. I just cant work out what recipe you would use. It would need to be able to be rolled and not to crumbly or crunchy. I am asking for my sister who feeds them to her baby. I know my kids would like them too.

Something like a fruit slice?? I think you could take this recipe and use it as a basic start?? I use dates as filling rather than the mixed fruit but you could use homemade jam or fruit puree to put into the bickie pastry and roll it into this bar shape. You could even mill oats or nuts and put it in bickie pastry. ???
Pastry
125g butter
50g sugar
1 egg
260g SR flour
a little milk
Filling
500g mixed fruit
60g water
juice 1/2 lemon
1 tbsp syrup
1 tbsp cornflour
Put fruit, water, lemon juice and syrup into bowl 100C 5min sp 2-3
Thicken with cornflour and put aside to cool.
Cream butter and sugar. Add egg and beat well.
Add flour and milk and mix into stiff paste.
Roll out half of Pastry into 30x20 tin extending up sides of tray.
Spread filling over pastry.
Roll out remainder of pastry and cover filling. Press edges together.
Brush with milk and bake in 180C for 30 mins.
Stand for a few minutes and turn out.
When cool top with lemon icing and cut into 24 pieces.

Does that box really say for children 1-3 years? :o I'm horrified that this sort of highly processed junk is being promoted as a nutritious snack for babies and toddlers. :(

So here is what I have come up with - felt like Heston trying to make these look like the Heinz bars!! :D
Pastry
125g butter
50g sugar
1 egg
260g flour
2 tsp baking powder
a little milk
Filling
500g dates
60g water
juice 1/2 lemon
1 tbsp syrup
40g flour
Put fruit, water, lemon juice, cornflour and syrup into bowl 100C 5min sp 2-3 (add extra water if starts to stick)
Put aside to cool.
Cream butter and sugar. Add egg and beat well.
Add flour and bring together at sp 4
Add a little milk and :-: 30 sec will come together into a ball of pastry.
Divide Pastry into 3 and roll into long sauge shape and flaten out.
Spread filling down middle of pastry.
Fold pastry in to form 'sausage roll' shape
Brush with milk and bake in 180C for 30 mins.
(Look at photos to get the idea of what I mean. ;))

As you can see the filling was too much so either halve the filling or double the pastry. ;)

Verdict: I think with a little tweaking as to sizing this will work and they remind me of the Arnotts 'pillow bickies' we had as kids. What do you think??

Nay-Nay you are brilliant. Wow I am so glad I asked the question about these. My sister will be over the moon especially knowing how bad the Heinz ones are.

Do you think other dried fruit like apricots etc could be used instead of the Dates for different flavours?

Could you use thick, stewed apple as a filling too?

My kids have never had anything like these but DS No4 did point out something similar that other kids have in their lunch boxes the other week - now I can match them :D :D

JD I had the thought that you could use any stewed fruit as a filling as long as it was fairly thick so probably cook with minimal water etc ;D ;D

Very impressive Nay-nay :)
I'm sure that the home made ones are better than the packaged variety but it's still not really an ideal snack for little ones. Whatever happened to the good ol' fruit and vegie sticks?

A Star?? :-[ Don't know about that but the verdict from the kids: "Delish!!" ;D I have never bought anything like this for their lunches either but miss 9 informs me they have had them over at Grandma's place sometimes. :-)) One thing I really like about the mixture used is there is not loads of sugar and you could make up different fillings leaving out syrup all together if you like. Dates really didn't need it. They would make double this amount if made smaller - at least 15 anyway. Yes you could use any type of of fruit puree, cooking and thickening it with the flour - love to hear what you come up with??

Fantastic Nay! I am always on the lookout for recipes that replicate popular snacks with healthier ingredients. My eldest son dreams of having a lunch box filled with "packets" like some of his friends. One of these in a fancy container will be a lovely suprise for him. I am going to make them tomorrow. :)

Dede - I am now thinking the texture may be too crumby for a 1 yr old - it depends how old your sister's baby is. Anyway let me know what you think. ;)

I made two batches of these yesterday - date & lime and apple, cinnamon & sultanas. They are more "biscuity" than the commercial variety but still very good. I only baked mine for 25 minutes and might reduce it by a little bit more next time. In the date batch I used 300g of dates and about the same amount of liquid as specified in the recipe. In the apple bars I used 5 peeled and chopped apples, some rapadura, a little water, cinnamon and sultanas. I stewed them for 5 minutes, 100 degrees, speed 2. Each batch made about 15 bars and I have frozen most of them. I defrosted one this afternoon (so I could report back) and it was perfect. ;D
P.S - Our eldest son was so excited when he saw the bars. He said his friends have the same bars for morning tea at school. ;) ;D

Well Nay-Nay. I just made Nay-nay's fruit bars and they are delicious. I made mine with 125g dates and 125g of apple sauce. And I only had 100g of butter left so I made up the othe 20g with apple sauce as well. They have only just come out of the oven 10 minutes ago but I couldn't help my self but try one. They kind of taste like the weight watches apple crumble bars which I really like. Now I will wait for the kids verdict and let you know. ;D

My thermomix arrived Friday night and I think it's been going non-stop since then ;D So much fun!
Stumbled across this thread and would like to try making them today. Can I just check what is the syrup in the filling - is that glucose syrup or golden syrup or some other syrup? Thanks.

Yeah - Golden. But you can use honey or maple or leave it out. Hope it goes well. ;)

Chelsea - can I ask how you freeze them. Individually or in an airtight container? I've never had much success with freezing baked bars. Thanks.

I put them in large ziplock bags and laid them on a tray in my chest freezer. I made sure they weren't touching in the bags until they were frozen solid. After they were frozen I removed the tray and they were fine to be tossed in (not laid out carefully). :)

These look really lovely, just like the old 'pillows' I adored as a child.
I do think that you'd need to add bran or use wholemeal flour in the pastry to make them more nutritious for children, though.

I made them into 15 bars - about 3" long.
Chelsea thanks for the tips on freezing them - not sure if they will make it to the freezer. DH wants to take them into work tomorrow for his mate (who also has a thermomix) to try.

I made these this afternoon & was so excited & thought they tasted really yummy .. & my children don't like them :(
My 5 year old is so fussy with sweet things >:( She doesn't like the custard, or any of the cakes, or the hazelnut spread, or Luigi's biscuits. Drives me bananas (cause I have a sweet tooth!)
I ended up taking some to my lovely beautician tonight when I went for a wax ;D (as I don't want them going to waste!) At least SHE liked them :)

I was buying the supermarket brand of these for my son while i was taking him with me to work (as a nanny to 3 other little toddler boys) and always felt guilty as i knew they were mega bad for a one year old but he loved them and it was so easy to just give him one when i was busy with someone else but he wanted mummy. :-[
I am going to make these today for us. Some have commented that these dont look very healthy still but i disagree... you can modify to use alternative ingredients and there are no additives/preservatives like the supermarket ones... plus if your going to eat them anyway you may as well make them a little better!

So I made these and they are YUMMY! I did an apple, cinnamon and sultana filling and being a bit forgetful forgot to add the baking powder and didnt remember until i was packing up and saw it on the bench! They were still fantastic though and i would consider never adding the baking powder as they were just like little apple pies! I would make them into a dessert and serve with ice cream!

Oh yes, the old 'forgot to put something in' problem ETC - sometimes it works out for the better but sometimes I have found a whole plateful of something I forgot to add and have had to quickly remove the dish from the oven and add them in :-)) :-))

I made the apple and cinnamon filling for these. Loved the flavour but I got in to so much mess with the filling! Not too sure what I'll do different next time. Perhaps the filling needs to be thicker. I have loads of filling left which will be frozen and used for more at a later date or would even make a nice filling for an apple crumble/pie. I'm tempted to perhaps cool the pastry in the fridge for a little while next time to make it easier to handle.

It didn't matter too much as I just sliced them thin width ways and told DH and DD they were biscuits, lol.
The thinner I triied to make them, the more the pastry would split. And I couldn't move them once rolled out as they would break - is that normal?
Any tips?

My pastry was quite soft but I divided as in the recipe and use a sheet of baking paper with a little flour on it. Rolled out the pastry in an oblong shape, spread the date mix down the centre then using the paper folded the edge over and then folded again using the baking paper to roll it over. Then I cut slices and placed gently on a tray lined with paper. Hope that makes sense and that it might help

Thanks for the recipe Nay-Nay! Made these today but was out of sugar so substituted 25g honey & reduced the butter to 100g. Was really happy with the pastry. Used left over stewed fruit (apple, pear & strawberry) from breakfast, yummy. Will have to try the mixed fruit filling next time, I love the old style fruit pillow biscuits.
