As some of you may have seen on FB, I was able to convert Sue Dengates marshmallow recipe for TM. Easy As!! You could do so much with this mixture - there will be heaps of slice creations made I bet!
4 tbsp gelatine (sorry I forgot to weigh this)
220g warm water
880g sugar
440g boiling water
2 pinches of citric acid
Icing sugar and cornflour to dust
Add gelatine and warmwater to tm bowl and mix for 20sec on speed 3.
Add sugar and boiling water and cook at varoma temp for 20 min on speed 1.
Allow mixture to cool to 37 degrees. Add citric acid and butterfly and beat mixture for 5min on speed 4 or until white and thick.
Pour in to silicon baking trays or wetted cake tins and set in the fridge.
When set cut in to squares and dust with the icing sugar and cornflour mixture.
It makes a LOT! filled 2 square cake tins to 3.5cm and still had about 500ml left in the TM bowl. I mixed in rice bubbles and a couple of tablespoons of cocoa to make chocolate LCM bars. Not sure on exact amount of rice bubbles, you just add as much as you need so that the mixture still sticks together ok. You could use cornflakes and a mixture of seeds or grains with the rice bubbles.
This is converted from Sue Dengate's failsafe recipe.
You can get citric acid from the supermarket.
TIP: I did try beating it at various temps as the kids were impatient but it would not thicken up properly, I found that I had to wait until it had cooled completely. And it needed the butterfly, beating with the blades wasnt enough.

Thank you riv mum i will be using this for the ltms for sure!!! and come winter when i love marshies in my hot choc there will be alot less guilt about nasties!!!

I have a batch of these cooling in Thermie as I type. Wish they would cool faster, have a ton of jobs to do today.
In regards to how long they keep, the traditional ones I used to put in an airtight container and they would keep for about 2-3 weeks, or rather they were fine for at least 2-3 weeks, we have normally eaten them all by then, so they may well last longer.

This recipe looks delicious - one dumb question from me: what is meant by "failsafe"? Does it mean you just can't go wrong with it??

I thought the same as you cottchick when I first read that term used here on the forum. No, it is all about food intolerances and eliminating food additives from your cooking. I'm sure someone who cooks this way will explain it much better than I have though.

I made these the other day. DH says this is what marshmallow should be like, not the bought ones with the crusty coating that makes them taste 'grainy'. So thank you. He loves marshmallows!! Youngest DS wants to try different flavours. So we'll work on that and get back to you!! But I agree with obbie, they did take a long time to cool down, but yes, everyone loved them. I made 1/2 batch, which still made a lot.

how do you store them in the fridge, or once they are set do you dust them and keep them in the pantry? :-\

I had a massive fail with this today, I used rapadura sugar and it kept bubbling over at the aroma temperature. There was sugar all over the wall, floor and table, I was completely freaked that sticky sugar would go into the mechanisms and stuff up my beloved. Anybody else had this problem. I followed the OP to the tee. I'm just waiting for it to cool now so I can beat it.

Thanks! I will have to try this as I tried making in TM a couple of months ago (not sure where I got recipe from - possibly 'friendly food') and had trouble with separation when it set I had 3mm yellow gelatin-like base to the fluffy marshmallow that sat on top. Is this normal? Or should it be all fluffy white stuff? I don't know if I'm chasing an impossible outcome. Kids still liked it though. ;)

Oh dear- I had an overflow at the 18 1/2 minute mark too :'( And I used regular sugar- did everyone else really do the full 20 minutes on Varoma?

I'm afraid I have never made marshmallow.Hopefully some forum member will be able to help you :)

I really like the look of this but am concerned about the boiling over. Maybe half quantities would be safer do you think?

I made this yesterday, DEFINITELY halve the quantity, mine boiled over after 7 minutes, alternately possibly cook at 100 degrees rather than Varoma. I made the full mix and I had to pour half out of the jug to be able to whip it up with the butterfly too, so next time will be making a half quantity and adding a bit of vanilla for flavour.
They did turn out nice though, very yummy and didn't last long!

Making a batch for DS now. We are going out to wash the car and collect his brother while it cools. He has colored it yellow so trying to decide what flavor. (Eeerk american spell check!!!)

I decided to give marshmallow a go today using Alexx Stuart's recipe (http://alexxstuart.com/life-changing-rocky-road-with-real-marshmallow) all was going well other than it wasn't fluffing.
So a bit of googling & I found this post. The tip to let it cool to 37c is spot on & saved what was looking to be a disaster. They are great and only problem is to stop eating them so I can use them in the rocky road 😄

Just want to add to this post. I don't advise cooking on Varoma in the TM5. Mine started smoking!! I've looked at a few other recipes and cooking at 100 for around 10 minutes is plenty. You only need to dissolve sugar and bring to the boil.
Cooling to 37 is the key. I've popped my whole bowl in the fridge to cool.
