Speltrolls, my breakfast favorite, with photo

Speltrolls

Ingredients:

Makes 12 rolls.

500 g spelt (Wheat is okay too, I just donīt like it as much)
300 g water
20 g olive oil
10 g 'white' balsamic vinegar (any other works too)
20 g fresh yeast
2 teaspoons salt
2 teaspoons locust bean gum (translated that from the dictionary, if you donīt have it, itīs okay without)
1 teaspoons honey
Seeds: poppy-, sesamee-, sunflower-, Pumpkinseeds to tast

Preparation:

  • heat oven to 175°C, put a large (ovenproof) dish of water in the buttom
  • grind spelt to fine flour in three steps: 200 g 1,5 Min./speed 10, put it in a bowl, repeat with 200g and the last 100g
  • use a spoon to stirr salt and locust bean gum into the flour
  • fill  the TM with: water, olive oil, yeast, honey, put the flour mix on top, put in the vinegar last and mix for 1,5 min./::
  • take out the dough, cover it and let it rise for 1 hour
  • devide into 12 pieces and make them into rolls, cut tem, spray with water and put them 'face down'into what ever seeds you like and set them on a prepared tray
  • cover and let them rise another 20 min.
  • bake for 15-20 min.


If your fridge is big enough, you can place a prepared, unbaked tray of rolls there overnight and bake them in the moning, cover with foil. Donīt let them rise before you refrigerate them. Take them out when you start to preheat the oven, the bake them as usually. If your fridge is not big enough, set them side by side on a differnt tray, lined with a baking sheet (translation right?). You only have to move them again in the morning ;).

Thanks for the recipe - the translation/explanations are fine for me - baking sheet is perfect, explanations about storing in fridge OK

Locust bean gum is correct - can you substitute guar or xanthan gum?

so I did get it right! Thanks for telling me :)!

I guess you can substitute with guar or xanthan gum, but I have no idea if it would also be 2 Teaspoons. Maybe Tebasile can enlighten us on that.

But you can also leave it out. What it does is, that the structure of the rolls turns out more elastic when using the locust bean gum. Thatīs quite nice for people who are used to white flour rolls.

Most wheat free recipes use guar or xanthan. If you're using wheat flour, you won't need the gum.

Sounds like a nice recipe.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
