Cyndi's Herb Bread

Patzee here is Cyndi's Herb bread recipe. It is from her book "Healthy Eating"

Ingredients:

100g whole grain wheat, spelt or rye. I used rye.
400g unbleached strong flour or Baker's flour
300g water
2 teaspoons dried yeast
1 teaspoon salt
20g oil
1/2 cup fresh herbs
Sesame or sunflower seeds for the top

Method:

Place herbs into the bowl and mince for 4-5 seconds on speed 6.

Place grains into the bowl and mill for 1 minute on speed 9.

Add water first then yeast,  salt, oil, flour and herbs into the TM bowl and mix for 6 seconds on speed 6 to combine.

Set dial to closed lid position.  Knead for 2 minutes on Interval speed.

Place the dough into a floured bread tin or onto a floured tray and mould into desired shape.  Sprinkle with seeds.  Allow to rise in a warm position or place in a pre-heated oven on 50 for 15 minutes.

Once dough has risen, bake in a hot oven on 200 for 20-25 minutes.

Thermomixer you're a star. I'd just posted it. Perhaps you could remove mine as I didn't put it in bread.

It may as well stay there too - don't think we'll overload the machine.  Just nice to have it here too - easier to find.

Thanks Thermomixer for this recipe.  Sounds  delicious with the fresh herbs. I am having the most success with  breadmaking.    Havent been very adventureous (sp??)  with trying too many other recipes yet.  Will get there......

I made two loaves of this last night, without the herbs.  It's a beautiful 'wholemeal' style bread.  I think this could be our staple bread recipe.  I couldn't believe how easy it was!

A little tip.  I suddenly remembered last night that lukewarm water activates the yeast.  So when making my 2 loaves last night, I used warm water.  And the bread rose much better, and is much lighter.  It's not as dense and heavy, and has a much better shape as it rose to fit the bread pan.  So my end crusts are full slices, rather than narrowing off.

Great tip  cathybenson79. I use my bread machine on a daily basis. I like the bread I make, but I also like lighter bread but have never thought of asking around.  Tonight I will try with lukewarm water. Thanks for the fab tip
