Breakfast / Fresh Cerial with Spelt, photo

Good morning!

Here another variation of the Bircher Müsli like fresh Cereal. Itīs made with spelt and every grain exept oats have to soak for at leat 2 hours for the Cereal. If you prepare it as a drink (will post that too), you mill it to fine flower and then it only hast to soak 15 to 30 min.

Oats will turn bitter when soaked too long.

Fresh Cereal with Spelt

Persons: 1

Ingredients:

3 tablespoons of whole spelt
75g of water
1/2 apple (with peal, no core)
1/2 banana (pealed)
6 walnuthalves
1 tablespoon of cream or sour creme
1 teaspoon of honey, if desiered

Preparation:

The night before:
  • Mill spelt 20 sec./speed 10.
  • Add water and stirr on speed 3 until its mixed, scrape down anything down.
  • If you donīt need the TM for anything else, just let it sit there over night.

In the morning:

  • Add apple, banana, nuts, honey and cream, mix for 1-3 sec./speed 4


Again this is a recipe, that beggs being alltered. You can also add raisens or other dried fruit. Use different grains, mix them! Only, I wouldnīt use rye or just a little bit.

Vegetarian / Potato Pancakes, traditional German recipe, gluten free, photo

Hi!

This is a traditional German recipe. They are not really pancakes, but when I was an exchange student in the U.S. I had to make them almost every week. I couldnīt get them done fast enough. The kids there called them Potato Pancakes. Before TMX I grated them on a foodprocessor, before that by hand. Making them for my american family ment grating by hand, feeding a crowd of 9. With the TMX this recipes is easy, but also a little tricky. The potatos are not supposed to be mushy after "grinding", but also they have to be processed long enough for them to stick together.

Potato Pancakes (Reibekuchen)

Number of People: 4

Ingredients:

80g whole rice
200g onion, peeled in quarters
1000g potatoes, pealed, in pieces (approx. 2x2cm)
1,5 Teaspoon salt
2 Eggs
fresh ground nutmeg

Preparation:

  • put rice in the TMX and mill 1min./speed 10 fill into a separate bowl
  • add onions, and chop them 10 sec./speed 5 with the help of the spatula
  • Now everything thatīs left goes in for 10 sec./speed 5 with the help of the spatula
  • Open the lid and take a look at the batter, the pieces should be no bigger then 2mm, if needed repeat the 10 sec./speed 5 with the help of the spatula, my experience is, that I do it twice
  • Heat a frying pan with 0.5cm of olive oil (my favorite for frying) to medium heat and spoon batter into the pan, making each pancake about 10cm big (diameter) and 1/2 thick (takes about a tablespoon full), fry until golden brown from both sides, always see that there is enough oil!

Tips/Hints:

We eat them with applesauce, apple butter, my husband and kids with sugar sprinkled on them (not my taste), some people eat smoked salmon or caviar with it. No joke!

If you onliy take a teaspoon for each pancake, you can have them as finger-food with a cream cheese topping, very good!

Riceflour can be substituted by any other kind of flour or starch, only itīs not necessarily gluten free anymore.


Iīm very curious if anybody is daring to make them :)!

CC: Halved the recipe.I was very careful when cutting the potatoes into even sized pieces before putting them into the TM.It only took 2-3sec speed 5 to chop everything with the spatula into a chunky batter.There did seem a fair bit of water residing in the final bit of the batter   I made ten pancakes.They taste lovely and DH and DS loved them.

I just carefully drained it off but the last pancake was quite a sloppy mixture Marina.

Hi,

here it is, the recipe. Still have to get a picture taken though. I found, that I had postet my recipe in Virus Culinarius already. Only, itīs not my picture there.
 
Fresh Cereal with Oats

serves: 1

Ingredients:

3 Tabelspoons Oats
1/2 Apple in quaters, with peel, no core
4 Dates
1 Tabelspoon Cashews or other nuts
1/2 Tabelspoon Creme or Sourcream
1 Teaspoon Honey if needed, the Dates add enough sweetness
some cinnamon
some ginger (powder)

Preparation:

  • Put oats in the TMX and grind them 20 sec./speed 10, fill in a bowl
  • Fill cashews, and dates in the TMX, 10 sec./speed 10, scrape down, leave in the TMX
  • Now put the ground oats back into the TMX, plus apple, cream, honey, cinnamon, ginger, mix 5-10 sec./speed 4, look after 5 seconds and scrape down befor turning it on again.

Let the cereal sit for 15 minutes befor you eat it. It doesnīt sound like a substantial breakfast, but it keeps me going until lunch. I onliy eat some fruit inbetween.

This morning I altered the cereal, like always, thatīs just what happens to this recipe :). we just took the plumps and apples from ous trees, so I had the half of a small apple, some plumps. Then I didnīt find the dates, I substituted with figs, cream was out, I used water. I totally forgot about nuts today ;).

Bread / Speltrolls, my breakfast favorite, with photo

Speltrolls

Ingredients:

Makes 12 rolls.

500 g spelt (Wheat is okay too, I just donīt like it as much)
300 g water
20 g olive oil
10 g 'white' balsamic vinegar (any other works too)
20 g fresh yeast
2 teaspoons salt
2 teaspoons locust bean gum (translated that from the dictionary, if you donīt have it, itīs okay without)
1 teaspoons honey
Seeds: poppy-, sesamee-, sunflower-, Pumpkinseeds to tast

Preparation:

  • heat oven to 175°C, put a large (ovenproof) dish of water in the buttom
  • grind spelt to fine flour in three steps: 200 g 1,5 Min./speed 10, put it in a bowl, repeat with 200g and the last 100g
  • use a spoon to stirr salt and locust bean gum into the flour
  • fill  the TM with: water, olive oil, yeast, honey, put the flour mix on top, put in the vinegar last and mix for 1,5 min./::
  • take out the dough, cover it and let it rise for 1 hour
  • devide into 12 pieces and make them into rolls, cut tem, spray with water and put them 'face down'into what ever seeds you like and set them on a prepared tray
  • cover and let them rise another 20 min.
  • bake for 15-20 min.


If your fridge is big enough, you can place a prepared, unbaked tray of rolls there overnight and bake them in the moning, cover with foil. Donīt let them rise before you refrigerate them. Take them out when you start to preheat the oven, the bake them as usually. If your fridge is not big enough, set them side by side on a differnt tray, lined with a baking sheet (translation right?). You only have to move them again in the morning ;).

Hi!

My name is Susanne, I live in the nothern part of Germany.

I cook for a family of four and have used the Thermomix for 3 years now. My favorite are vegetarian meals and raw food. Sometimes I do eat meat, but the amount is neglectable. Over 20 years ago I bought my first grain mill and started on using different grains, ground fresh.
