Hi Meganjane,

What it does is, that the structure of the rolls turns out more elastic when using the locust bean gum. Thatīs quite nice for people who are used to white flour rolls.

Yes, you can leave it out ;).

Hi!

That is so important: never leave it alone while kneading! If I do anything in the kitchen while kneading bread, I put a large plastic bowl in front of it. If the TM should move too much, the bowl will fall down first. That gives me time to react. But still I watch closely.

Okay,

I read a few articles on it on the internet and thought it was very funny ;D. Then I looked up a more professional brewers kit and found this here.

But thatīs almost 1500€ and I can buy lots of beer for that money ;D. And I wouldnīt know what to do with 20l at once!

Hi!

After a headache glued me to the couch yesterday, I made them today.

I made one half of your recipe and my girls loved them. For me, I prepared them with freshly milled spelt (yeah, I know, Im a spelt lover ;D) and agave and ate them all with maple syrup ;D! Yummyumm. Very good.

Hereīs my version with spelt and Agave:


Ingridients:

270 g spelt
30 g walnuts
40 g oats
2 eggs
275 g milk
1 tablespoon agave (or Honey)
1 tablespoon lemonjuice
2 bananas in quatres
3 teaspoons bakingpouder

Preparation:

  • Mill spelt in two portions, each: 2 min./speed 10, set aside.
  • Mix walnuts and oats 1 sec./speed 10, put with the flour.
  • Mix milk, eggs, agave (or honey) 5 sec./speed 4.
  • Add Lemonjuice and bananas, mix 3 sec./speed 4.
  • Add flour, bakingpowder and nuts, mix 10 sec./speed 4.
  • Fry in little oil until browned from both sides.

Buckweed ist great for the cereal! Also millet/sorhum (translation from dict.), it feels a bit 'sandy' but I donīt mind.

Then Quinoa and Amaranth are wonderful! They donīt have to be milled, just soaked, the same with teff.

Well,

Iīm the one that threw a bucket of water down the steps to the basement. The rug I used for cleaning was supposed to go down there. It was in my other hand.... :D . The laundry mashine is down there...

Hi!

A friend of mine has a goat farm, they make fabulous cheese and we sometimes buy their meat too.

A rost of Goat Meat needs much longer cooking time then pork! I also cover it with aluminum foil, when itīs brown enough!

Good morning!

Here another variation of the Bircher Müsli like fresh Cereal. Itīs made with spelt and every grain exept oats have to soak for at leat 2 hours for the Cereal. If you prepare it as a drink (will post that too), you mill it to fine flower and then it only hast to soak 15 to 30 min.

Oats will turn bitter when soaked too long.

Fresh Cereal with Spelt

Persons: 1

Ingredients:

3 tablespoons of whole spelt
75g of water
1/2 apple (with peal, no core)
1/2 banana (pealed)
6 walnuthalves
1 tablespoon of cream or sour creme
1 teaspoon of honey, if desiered

Preparation:

The night before:
  • Mill spelt 20 sec./speed 10.
  • Add water and stirr on speed 3 until its mixed, scrape down anything down.
  • If you donīt need the TM for anything else, just let it sit there over night.

In the morning:

  • Add apple, banana, nuts, honey and cream, mix for 1-3 sec./speed 4


Again this is a recipe, that beggs being alltered. You can also add raisens or other dried fruit. Use different grains, mix them! Only, I wouldnīt use rye or just a little bit.
