Title: Mochi Cheese Puffs or Pćo de Queijo (Brazilian Cheese Bread)

These Pćo de Queijo (Brazilian Cheese Bread) are super delicious, irresistible savoury snacks. The whole family loves the mixture of crunchy crust with chewy insides. Very easy to whizz up.

1 egg
60 g olive oil
160 g milk
170 g tapioca flour
50 g grated mozzarella / tasty cheese
50 g grated parmesan cheese
1/2 tsp salt

1. Put all ingredients in TM. Speed 5, 5 secs. Scrape sides. Repeat.
2. Fill greased muffin tin 3/4 way.
3. Bake for 20 min in a preheated 200C oven, until puffy and golden brown.

If using Airfryer, preheat 160° 5 mins. 170° 7 mins. Turn the puffs upside down, and place bottoms up (yup! 😆) within the silicone moulds. Add 5 mins.

This will give you an even golden colour 😃

Tips:
I've used silicone cupcake moulds in the airfryer. I bake in 2 batches, 9 puffs per batch. Kmart sells the moulds at $2 for 6 pcs.

I usually have some in the freezer for quick snacks.

I don't think I have tapioca flour BZB, do you have to use it or can I substitute it with potato flour perhaps?  I don't need to cook GF so could I use ordinary flour?

Or could we mill some tapioca as I can't buy of the flour here?  Wonder if the TM would mill it fine enough?  ???

Judy, I'm not sure if you can sub the tapioca flour. It's the ingredient that makes it chewy. Then again, it could work. 😃

You can buy tapioca flour at Asian groceries. The one in my suburb sells a 500g pack at 90 cents.

Julie, I've not milled this flour before. Might be an interesting experiment 😄

Thanks for the link and the offer to source and send me some flour Judy.  :-*

I'm coming to Adelaide in May for a couple of nights, so if the tapioca doesn't mill down too well, I can look for some of the flour then.  Will def give it a try using Tenina's grind, rest, grind method. Will report back when I do.  ;D

Tapioca can generally be substituted for arrowroot :)

Tried baking with oven today. My oven can't go up to 200c, so I used 160c fan forced. The mini puffs took 20 mins. The regular sized ones took 30 mins to brown.

Prefer the airfried ones. Gives a better texture, but can't get uniform shapes.

Uni, I suspect it's due to the airfryer's strong air circulation. The pastries go a bit wonky. I've tried 4-5 times (cos my kids love them, hence the many trials) and I still get a few funky ones :D

But all TASTY!! :P

Well I said I must try them long ago and I still haven't made them. BUT BZB gave me some this morning. She is so right, they are yummy. I have just sneaked one. I will definitely be making them. Thanks BZB.

Glad you enjoyed it, Cookie. We love these cheese puffs, except for Mr Fussypot (my youngest) 😄

I've experimented further with temp and timing in the AF, to get more consistent shapes and colour. Will edit recipe soon.

Looking through starters & snacks last night I came across this recipe of BZB's.  Recently I made Brazilian Cheese Puffs (http://www.forumthermomix.com/index.php?topic=16667.0) from Travelling with Thermomix which I loved so I thought I'd try this recipe to compare.  The ingredient quantities and cooking temperatures were different, there are a lot of recipes out there for this tasty morsel.

I used the a/f as BZB suggested because she preferred those cooked this way rather than in a mini muffin tin in the oven.  I can understand why you couldn't get the shapes uniform BZB, with the sides of the wire basking having a slight slope into the centre, I think it would be an impossible feat. I don't think my large ones are cooked enough (still edible though) but the little ones were fine.

My mistake but the silicon cupcake holders I used were quite big for the first lot and took much longer to cook so I then used my smallest cupcake holders for the remaining mixture.   As the cooking took much longer than I thought, for that reason I would prefer to use the oven and cook them all in one go and in mini muffin tins for an even shape.   Some of the batter overflowed onto the floor of the a/f so I discovered it made excellent cheese cracker biscuits  ;D

I'd like to tray a batch of those cheesy crackers Marina, I'm sure tablespoons of the mixture on a flat non-stick tray would work.

I needed something quick to make in the morning before school for a class party. These were terrific. I used mozzarella and Parmesan cheese, cooked them in greased, silicon mini muffin tins and baked them in the oven
