French Onion Soup Mix
Submitted by Auzzi (Best Recipes)
Ingredients
3/4 cup dried minced onion
4 1/2 Tbs beefstock powder
4 Tbs Onion Powder
1/4 tsp Celery Seeds
1/4 tsp sugar
1/4 - 1/2 tsp curry powder (or to taste)
1/8 tsp white pepper
Place celery seeds in TM 5 sec speed 7.
Add remaining ingredients and mix 10 sec reverse speed 4.
Store in airtight contain
3 1/2 Tbs equals 1 packet french onion soup mix
I use this in my beef patties and sprinkled over BBQ Lamb chops baked in the oven. We all love it.

FANTASTIC - there are a couple of recipes that I just haven't converted because they use a packet of FOSM - woo hoo
just need to find a friendly beef stock powder so if anyone has a brand please post :)

Just bumping this (http://www.forumthermomix.com/index.php?topic=783.0) recipe using French Onion Soup Mix. CC posted a couple of links on there for 2 of these mixes, the first one has no beef stock powder in it Kathryn.

sprinkled over lamb chops in the oven is one that we miss, DH actually commented yesterday when we bought some chops that he would love to have it again. :)

Not sure what you mean by friendly Faffa but the Massel stock have no animal content, gluten free, lactose free and no added enhancers according to their website. You can buy them in powder, cubes or liquid form. Hope this helps.

Mandi, does the beef stock powder contain yeast extract? According to this (http://www.forumthermomix.com/index.php?topic=6599.0) thread, this is MSG. You would need to have a can of it in front of you as it doesn't mention it on their website.

Just checked and the Gourmet plus range says that they have no added MSG. Doesn't mention it for the other range so I guess that it is added. Might need to check thoroughly though.

There is also this brand as well Vegeta Beef Stock (http://www.vegeta.com.au/products/vegeta-beef-stock-powder), Also says no added MSG

In the herbs & spices aisle medusa you will find dried onion flakes - I presume this is what is meant here. I bought the dried fried onion flakes from an Indian supermarket for my Indian cooking so I use that.

Where do you buy celery seeds, I have a few recipes which use them and haven't been able to buy them near me.

They are hard to find Wonder, I found this question and answer on the net if it helps. Keep looking and asking around though for the real thing. Try health shops or buy online here (http://www.gourmetshopper.com.au/shop/product.php?productid=114).
'Please let me know if there is a substitute for celery seed which I I cannot find in local shops. I want to use it in a German potato salad.

Caraway or dill seeds would be acceptable substitutes, especially for a German potato salad.'

I just brought the Vegeta brand stock from the supermarket with no yeast extract in the ingredient list. Where the other brand Massel had yeast extract. So hopefully this is a better brand to buy.

Thanks JudyDawn, there's actually a specialist store not far from me that sells Herbie's products so I'll give them a try - not sure why I hadn't thought of them before.

just a question...the dried onion..wouldnt it be ful of preservatives etc..i have seen them here but have never looked at the ingredients?? anyone know..think it would kind of defeat the purpose of making your own if it is???

Hi Frozzie, I just had a look at my dried onion flakes and the ingredient is just Onion, so no preservatives here. You had me worried then lol.

Made a batch of this - will keep it in a ziplock bag in the freezer because the dried onions I used have been in there.

Hi Judy, Which beef stock did you use? I end up using the Vegeta brand gourmet stock (Not beef) but smells great anyway.

I just used what I had in the pantry Mandi, Continental low salt variety. I didn't look on the back to see what nasties it has in it, just want to get rid of it then buy something more healthy ;)

I used some of this tonight in our meal - varoma steamed rump steak. Placed pieces of steak in 1 piece of alfoil, topped each piece with a knob of butter then sprinkled a heaped tablespoon of the onion mixture over the top, sealed the packages and steamed it for 25 minutes. Vegies cooking in the steaming basket and around the meat parcels. Tasted just like we used to do in the 'old days' when we baked it in the oven.

That sounds great Judy. I can't imagine what steamed steak tastes like. I have never tried it that way. The French onion soup mix would give it lots of flavor.

There is nothing wrong with steamed steak Mandi, most people are put off by it but does the photo look like steamed meat - no and if you didn't tell anyone they wouldn't know either.

I will have to try it JD as I used to love it when my Mum baked steaks in the oven in foil parcels. She used relish, french onion soup mix and a tsp of water on each steak as the topping. :)

Ok, I have another question lol. I managed to find celery seeds today at pantry man (was so excited). what is the onion powder and is that in spice aisle too? i need to just go to the shops and have a look don't I instead of asking a million questions.

I can't get stock powder with out any nasties :'( :'( Can't find the vegetta brand here for the beef. They have the chicken and the gourmet. Have sent them an email today asking if I can actually buy it in WA ;)

Hi Faffa, I just used the Gourmet Vegetta stock and the flavour is still very yummy.

the gourmet one has MSG in it Dede. I prefer not to use it as DS reacts to it and as I would use this mix a fair bit I think I need to steer clear of it :(

I'm pretty sure that the gourmet one doesn't have MSG Faffa and no yeast Extract (Which JD mentioned was MSG). I don't know much about MSG but what ingredients would I be looking for?

When I had a look dede it was actually listed as Monosodium Glutamate - the full name which some manufacturers are using now instead of numbers to try and confuse us ??? ???

A. Yes it could. The vegetable flavour Vegeta gourmet stock powder contains MSG (flavour enhancer 621) which has been associated with a range of reactions including behaviour. The other Vegeta flavours (chicken, beef and chicken salt reduced) contain the newer flavour enhancer disodium inosinate (627) which seems to cause even more problems than MSG

on the web site it tells you where you can get it from in your state. We have a PFD here in Launceston so I will have to check if they have it there.

Just make sure you get the "msg free" and not the "no added msg". They are two very different things. Companies can write "no added msg" but include a product like yeast extract that is essentially comprised of msg. Sneaky.

your not wrong about being sneaky. They make it so hard with all these different names and numbers they use. Its so wrong when your trying to look after your family.

I had no idea either and I went to a Julie Eady (Additive Alert) talk and she was saying that now consumers are becoming number aware the manufacturers are now resorting to using the "names" as it seems like and ingredient. As she says, if you don't recognise it as a food then stay away :-))

Made another recipe using this mixture today.
Onion Roasted Potatoes
500g potatoes, no need to peel, cut into large chunks
1/4 cup vegetable oil
2 tblspns FOSM
Mix all together in a bowl then place onto a lined baking tray. Cook in a preheated 210oC oven for 30 - 35 minutes, stirring occasionally. They may look a bit burnt but they aren't, very tasty.

They sound really tasty JD. I love the flavor of the FOSM on baked lamb chops so I think the would be really yummy on potatoes as well.

I don't usually use soup mixes in cooking but as we now have this recipe, I would be interested in any recipes which include this one. Are any of the recipes you all talk about posted on this forum?

Potato Bake
4-5 large potatoes
FOSM
1 300ml cream, i use low fat
Peel and slice potatoes, place 1 row of sliced potatos in baking dish, sprinkle FOSM, repeat untill all potatos and soup mix finished. Pour cream over and bake in mod oven fod 1 hr or until cooked.
Options
Mix fresh herbs through FOSM, last layer add sliced musrooms and cheese.
Yummy, quick and easy

Yeast extract and Hydrolysed Vegetable Protein (HVP) are all MSG. I try to avoid it because as I get older it effects me more and more. I know if I get some because I get really thirsty and if I have it at night I have terrible dreams! I don't trust "no added msg" labels. To me this means there is some form of msg in the ingredients - just not extra msg! IMHO if there was no MSG they would simply say "no msg". Having said that, I've used the massel stock for the last few years (because it is GF) without any obvious side effects. Now that I have my TMX I'll use their vege stock instead where I can :)

FOSM i remeber reading well think I remember reading that 3tbs of Dedes mix is equivalent to 1 pck, can someone please clarify.
I am going to add it to a small carton f sour cream to make dip for tonight, just another way to show people a quick dip.

:) I think this is a good spot to post this.. Perth people- The new markets at Morley (Coventry's old site) has a great little herb and spice shop that sells everything in bulk (celery seeds too!) and even has little plastic jars for 80c. A great indian place too with HUGE bags of coriander powder and EVERYTHING else imaginable!!

Have just had a quick read through here as I've missed this before . . . . .just a thought - would Tenina's Chicken Stock Powder from FFS be a good replacement for the beef stock? I'm far from a purist when it comes to stock - beef, chicken, vegetable . . . it all adds flavour and if I haven't one on hand I use the other. Must admit though, since having the TMX and making the veg. stock (and making the stovetop chicken stock kept in the freezer) I've not used stock cubes at all come to think of it . . . . :D

My patties I usually ad a grated carrot and onion, couple table spoons of French onion soup mix, couple tablespoons home made tomato relish, and salt and pepper and an egg to bind it all together. I don't really have measurements but just throw it all in together. :)

The ones I made were pretty average, but I think the tomato relish would be nice - I'm going to make some of that. Do you use breadcrumbs?

The ones I made were quite basic, and I found them to be too meaty, if that makes sense. I normally make them with breadcrumbs, and I was thinking that maybe that was what I was missing. I really didn't enjoy them. I'll give yours a shot and see how I go. :-) Thanks again...
