Beef and Bone Marrow Indonesian Soup

So I was asked to test out this recipe and convert it for the Thermomix. It was quite complex to make, and I found the broth a bit plain, but the beef balls and marrow taste amazing. Let me know what you think,
You could double the recipe for 4,  but you may have to add some more cooking when you cook the balls in the broth.


INDONESIAN BEEF BALL SOUP WITH BONE MARROW

SERVES 2

   Meatballs
2 garlic cloves
1 brown onion, halved
1 tbsp. coconut oil
250 grams beef mince
1 tbsp. tapioca
1 tbsp. fish sauce
tsp. black pepper
tsp. baking soda
tbsp. grated ginger

   Broth
750ml beef bone broth
1 cinnamon stick
2 cloves
3 cardamom pods
5 cm stick ginger
1 tbsp. fish sauce
2 tbsp. lime juice

500 grams beef marrow bones
1 carrot, thinly sliced
3 sticks celery, finely chopped
1 bunch broccolini, trimmed and halved
1 daikon radish, spiraled (or replace with zucchini)
1 handful coriander to serve (optional)
chili flakes, to serve (optional)

To make meatballs

Place onion and garlic in Thermomix bowl and chop 3 seconds, speed 7. Add 1 tbsp. coconut oil; cook 3 minutes, 100 degrees, speed 1. Allow to cool 5 mins, add remaining  meatball ingredients, plus 1 tbsp. water and mix 10 secs, REV, speed 5. Remove from Thermomix to a large bowl, cover with plastic wrap and set aside in refrigerator for at least 30 minutes.

To make Broth
Pour stock into Thermomix, add cinnamon, cloves, cardamom, ginger, cook 20 minutes, 100 degrees, speed soft, REV,  with MC in place.
Place broccolini and carrot into TM basket and place in TM bowl, above stock, cook 10 minutes, 100 degrees, speed soft, REV.

Meanwhile, pop out the marrow from the bones and slice the bone marrow into 1cm thick pieces and set aside.

Remove basket from TM  and  set vegetables aside.
Remove cinnamon, cloves, ginger and cardamom from broth and discard. Add celery to broth. 
Roll beef mixture into golf size balls.
Place meatballs gently in stock and cook 3 minutes, 100 degrees, REV, speed soft, Add bone marrow,  fish sauce and lime and cook 1 minute , 100 degrees, REV, speed soft.
Season with salt and pepper if desired.

To serve divide the vegetables including the daikon or zucchini into serving bowls, pour the broth over. Add coriander and chili if desired.
