I made Tenina's Flour & Duck Fat Tortillas from KIS (p29) which was a good move considering that I couldn't find them at the supermarket and I'm sure they would have been disgusting. Her tortilla's were a breeze to make and I made them earlier in the day when I had time. I then made the enchilada's later when I again had time, and put some cling wrap over the dish and popped in the fridge after Step 8 for the next night.  The book translates to the chip, and it was very easy to prepare. I LOVE CHIPS!

Result: OMG - delish!

It took me a moment to figure out how Tenina's recipe could work with the chip. That's a good thing to know.
May all dairy items in your fridge be of questionable vintage.

Good to know!
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
