Best ginger bread recipe for gingerbread men?

What is your favourite ginger bread recipe, you know, the one your friends say "these are the best ginger bread men I've ever tasted!".

Mine!  ;)  I grind up the spices, orange zest, roasted almonds, etc in the Thermomix and the flavour is awesome! And they're really crunchy, which I love. :)

You can make them with regular or spelt flour if you'd rather, they still turn out really crunchy and delicious!

Thanks Jo - love the sound of the orange and almond in the mix.  And good tip for the piping bag, I'm been spending too much time on the online kichenware sites lately and have forgotten the "make do with what ya got" ways, which have always served me well in the past.

With the flour, if I use your quantities and make a mix with wheat, spelt & rice that would be OK?  I'm lucky the wholefood supermarket nearby has every kind of flour but want to make do with what I have.  I know rice flour in shortbread is fantastic for the crunch, and doesn't brown rice make it sound just slightly more healthy?

Sorry Vivaroo, just getting back on here! Yes, you can use wheat, spelt & rice - I'm sure it'll work fine! If it's too sticky just add a little more flour. It is a little more sticky than usual cookie dough that you roll out, but once you chill it (esp if you chill overnight), it's better. And popping each batch in the freezer after you cut them out (just for a few mins) really helps to get them neatly onto the trays!! :) Hope you like them guys!

Finally made my ninjabread men which were fun to make and well received at karate.  Jo I ended up going more basic with this one http://www.taste.com.au/recipes/9761/gingerbread+men but inspired by yours and added extra ground spices.

Those ninjabread men are hilarious. I've come looking to see what the wisdom of this site can tell me about using the Thermomix to make gingerbread men, as I've always used my Kitchenaid to do it previously, but I'm open to new (and simpler) ways!
