Title: Cranberry Maple Breakfast Scones

Name of Recipe: Cranberry Maple Breakfast Scones
Number of People: 4-8
Ingredients:
85g oats
140g wholemeal flour
100g plain flour
70g ground almonds *
1 tab baking powder
1 tspn cinnamon
1 tspn cardamom
100g unsalted butter, cut into cubes
65g milk (low fat)
140g yoghurt (low fat, i just used the yoghurt i had left, so if you have more or less in a tub just adjust the milk accordingly, you could also use flavoured) **
25g maple syrup ***
50g cranberries
for the glaze:
1-2 tspns each of maple syrup and milk

Preparation:
place oats in tmx, closed lid position *: and pulse using the turbo button x3
add in the rest of the dry ingredients and mix for 3 seconds on speed 7
add butter, closed lid position *: and pulse using the turbo button x2-3
add wet ingredients and cranberries. remove the measuring cup from the lid. set on closed lid position, reverse  :-: and knead  :: until the dough is well mixed (i forgot to pay attention to how long but probably just 3-4 'kneads')
line a baking tray (i used my silicone baking mat) and sprinkle with flour - probably about 1/8-1/4 cup. gently knead the dough a little more and shape into a circle. flatten until it's about 4cm thick. with a butter knife cut into 6-8 wedges.
in the measuring cup mix the extra syrup and milk and brush over the top of the scones. i think it would be nice with a few oats and some raw sugar sprinkled over too (ooops i just noticed this is actually in the whole wheat scones recipe!)
bake in a 160' oven for about 20-25 minutes

Tips/Hints:
** my dough was a little wet so perhaps i will adjust the amount of yoghurt next time
*** this was the perfect (not very) sweetness for me but if you like sweet breakfast dishes you might like to add a little brown sugar too - or you could serve with a brown sugar / butter blend

dh just got home from the Botanic Gardens native plant sale and had a scone - he's not a fan of any fruit except blueberries - but he loved them!

Is that 160 deg in fan-forced oven?

yes it is - though my oven cooks hot so i'm guessing 160, maybe even 170'C

Even DS number 4 (you know the really fussy one!!) LOVED it

Unless your oven cooks hot, you will need to cook it on 170ofan forced  ;)

I think so as they are really yummy, you can imagine I nearly choked and fell off my chair when DS started raving how good they were AND ate all his  ;D ;D

How are things in your world now? Hope you are feeling better so you can give Ryan all he needs  :-* Missing your input here though we will wait til you are ready  ;)

lol yes i can imagine! at the moment in our house there is barely a meal that someone doesn't whinge about, i am so over it!!

ryan is doing ok atm, still waiting to hear about funding and support at school. meanwhile i am still having probs - my own gp (who i went to for the second opinion) agreed that it was more likely not my thyroid causing my exhaustion etc and most likely chronic ongoing sinus problems (like last year, in fact nearly non-stop since about august last year). so i have just completed 4 courses of a stronger antibiotic which has achieved exactly nothing in the way of me feeling better :( am currently procrastinating on going back to see her again! anyway, i will get there! i will need more energy to fight for what ryan needs shortly lol

Hang in there indeed.  I seem to have been afflicted with chronic sinus problems and headaches this year.  It's the pits.

Wanted to give this a bump - just made the mix last night and popped in the oven this morning - too easy and UTTERLY delicious.  I can't say enough about these healthy little morsels.  I'm so impressed that we can eat them for breakfast without guilt.  My girls are sitting here happily eating them and I must say they are perfect with a cup of hot tea on a cold morning.
YUM YUM YUM!!!!!!!!!
Will be making more - hopefully I'll take a picture next time!!!!!
BTW - I used yoghurt to replace the milk content but also needed a few glugs of milk as my mixture was quite dry.
These are not an overly sweet scone but I too thought it was a perfect amount of sweetness as you can always use honey/jam as a topping.

they are excellent aren't they  :) Still a regular on our breakfast menu as DS still loves them. I make them with spelt now so I can still eat them  :D

I've just finished eating the last 2 for breakfast - would love to make a cinnamon and apple version of these 2!!!!!!! They're very satisfying..........I'm going to add more cranberries next time or perhaps dates ;D

Had these for breakfast today and they are delicious. Not very sweet which is great. Thank you we will be making these many more times.  ;D

Have made these a few times now and find we like to pat dough into a rectangle shape and cut into 8 rectangle pieces. It cooks more evenly and they crumble less. I also set my oven to 210 degrees no fan.

We are just eating these now and they are delicious!!!!
I still need to fiddle with the oven temp/time though (can't wait for a new oven!)
We used frozen blueberries instead of cranberries and cut them into circles with a scone cutter...yummo! Will certainly make again :)

Keep me posted on how long did you cook them for!! I will need to make a note on my recipe or I will have the lightening moment of remembering them being cooked this way and just bunging them in the oven for the usual time ... can see the disaster already lol  :-)) :-))

That's exactly what I did! They look and taster nice but are very dry so I put them in the microwave with a cup of hot water for 40 seconds to help moisten them up. Next time I'll have to remember to only cook them for 15 minutes or so.
