Today's tipp from Germany: Dried fruit (Fin 3 / 99)

Dried fruit is tasty as a snack or great for processing.
 Dried apples are easy for beginners.  Find a good apple with a balance of sugar and acid, such as the red Sternrenette (sorry, you'll have to substitute your variety here).

For a kilo of apples, you need about 6 kilos of fresh, good quality apples. First peel, then core and cut apples into thin rings. Dip the rings briefly in 1 liter of water with 1 tsp lemon juice added.  You can then spread them over flywire or thread onto a string and place in an airy loft or on balcony protected from flies. To store the dried fruits place in airtight plastic containers or tin cans.
