Red Wine Vinegar & Herb Marinade

Suitable for beef, veal, lamb, poultry and pork.
Beef can be marinated up to 2 days ahead.
Herb measurements are when chopped

Ingredients:
750g round steak medallions

Red Wine & Herb Marinade:
100g olive oil
75g red wine vinegar
1 clove garlic
1 tablespoon fresh sage
1.5 tablespoon fresh oregano
1 teaspoon freshly ground black pepper
1/2 tsp sea salt flakes

Method:
Put garlic, sage, oregano into TM bowl and chop Speed 7, 8 seconds.
Add rest of ingredients and combine on Speed 8, 5 seconds.
Add mix to snaplock resealable plastic bag with meat and refrigerate 8 hours or overnight, turning occasionally.
Drain steak, discard any remaining marinade.
Cook steak on heated oiled BBQ for about 2-3 minutes each side or until cooked as desired.

Not suitable to freeze or microwave.
Half recipe if you don't have a lot of meat.
Thinly sliced middle-cut blade steak or oyster blade is also suitable for this recipe.
Cooking the steak quickly over a high heat will ensure the most tender result, and overcooking will toughen the steak.

this is the only marinade recipe that I have kept over the years. I was looking for one in a couple of TMbooks, and as it was so stinking hot here 39o I didn't want to turn the oven on and as I was feeling a bit lethargic its just quick and easy to do in the TM and I just added the meat side of things as that was what the original recipe suggested but thought it was better in the condiments and sauces section.  please enjoy  ;D

Goodeo! and glad to hear its a regular now. ingredients simple, I am fussy, and this is a damn good marinade..

Yes it is, i am making some friday to take with us to Kalbarri, its great we have oregano & sage in the garden.

I used this on a whole split chicken cooked in the weber CP.  Slashed the skin and marinated overnight, lovely flavour with simple ingredients. The skin browned nice and evenly too.  Thanks for posting the recipe.

Katie if you are reading this, the reason we couldn't smell the chicken when you left was because it had run out of gas.  Luckily I had another bottle here but had no idea of course how long it had cooked.  1/2 hour later, it was cooked to perfection.

I think it would be fine, the herbs would be fresh from my garden.

yeah I reckon you don't really have anything in it that is going to go "off" really (apart from herbs but even they are probably fine in the mix)

Thats what I thought, especially as the herbs are fresh from the garden ;D

Just trying to reduce the amount if bottles etc to take up north, not sure how we are going to fit everything into our car!!

I have beef kebabs with red onion, zuchinni & green peoper marinating for tea tonight.
