Mango chicken

Mango Chicken
serves 4-6
Ingredients:
500g skinless free range chicken thighs chopped
3 potatoes cubes with skins on cubed
1 tablespoon TM stock
4 stalks silverbeet
500g fresh or tinned mango
fresh herbs (I used basil, marjoram and thyme)
2cm ginger
40g olive oil
1 garlic clove
1 onion
salt pepper to taste

Preparation:
place mango peeled cheeks or tinned mango Into TM bowl
and purée speed 10 for 10 seconds.

Remove from TM bowl (don't need to clean). Add herbs, garlic, ginger and onion chop for 5-7 secs on speed 7.
add oil and saute 2 mins 100 degrees on soft speed.

Add mango purée, stock, potatoes and chicken  cook for 17 mins at 100 degrees on reverse and speed soft.
Add chopped silverbeet cook for further 2 minutes at 100 degrees reverse soft speed.

Serve on steamed rice, garnish with chopped chives.

JD -  made this and it is really tasty.  Will steam some vegies later to have with it. I did have to cook it quite a bit longer as the potatoes weren't cooked. Thanks Evienme, I knew I would like it as soon as you posted it.

voitet7 - I made half the recipe as there is just the two of us. Turned out great and even a small bit leftover for my lunch at work.
I used frozen mango that I had put in the freezer from the beginning of the year. Really easy to make. Thanks for the recipe.

I made this for tonight's tea and it is really tasty.  Will steam some vegies later to have with it.
I did have to cook it quite a bit longer as the potatoes weren't cooked.
