Prune and Walnut log recipe

Hi folks,
there is a prune and walnut log for sale in a local shop, which is made in Sydney

I've found it on the web:  http://www.pastillanash.com/log.html, which lists the ingredients.

The price is astronomical (not surprising after all those food miles) so there's no way I will be buying one.  But does anyone have any idea how I would make one?  Or have you made anything similar that I could experiment with??  Hoping that one of you foodies will come to my rescue  ;D

Hi Caroline,

wow, this looks so good. I have dehydrated organic plums in the freezer, walnuts and lemons in the fridge..... I'm going to try it and let you know.
I found this recipe with fresh plums.

Can't be that hard - would be inclined to just heat the honey and sugar - probably 2/3 sugar and 1/3 honey with the lemon juice until sugar is dissolved and then mix in the prunes and walnuts (maybe with some of the skins rubbed off.) and cook for 5 or 10 minutes.  It would need to be fairly thick mix but I would start with about 1/4 cup of sugar and 1 Tbsp honey with a teaspoon of lemon juice and then add roughly chopped prunes until fairly solid and then the walnuts.  Place into a greased tin lined with some bake/silicon paper.

Would the walnuts go soft if cooked in with the prunes?

I soaked 300 g dehydated  plums and 300 g walnuts in extra bowls with water. Blended the plums with the soaking water, 50g Maple sugar and juice of a 1/2 lemon .....mmmmh it is a yummy jam. Then I mixed the rinsed walnuts  (would be a good spread) under it and there was my mistake. the nuts should have been dehydrated to become crispy. I placed it in portions on the dehydrator. I don't tell you, how it looked after a couple of hours. I took it out, rolled it again, wrapped it in baking paper and baked it at 100*C for 1 hour and left it at 75*C overnight in the oven maybe too long. It doesn't look bad, but not as good. The walnuts don't look as white as the original. It is still too soft and warm to cut. The walnuts look soft.

How about rolling it all up and steaming it in the Varoma!? ??? ??? ??? Would cook the prunes, without drying it all out, what d'ya reckon?

Sounds like a fair idea - just mix everything and then roll in plastic wrap (sorry I know some don't like it and then aluminium foil in a bonbon and steam - good thinking.

 i just had a taste of this prune and walnut  my spelling is not the best i hope you get what i wright)
i am  a stall holder on a good food market and when i seen this log i was thinking it's a good seller.
 i try it to  put the recipe together  put it in oven and fantastic
mince the prune and a bit of sugar walnut form a log and dry it in the oven val la            t

Hi Minni, welcome to the forum.  So you only used prunes, sugar & walnuts - what oven temperature did you use and how long did you leave it in there please.

Minni will you be posting the recipe here on what you did to pull Tebasiles suggestions together, or is it a secret recipe for selling at your stall?
Would be very interested in making this as my dad loooves prunes

Hi  Girls!!!
 well here is the repie for the prune and walnut  log!!!
 i made it 7 time for the market  it is  a very good selling  product .
 1 kilo prune
 half cup of brown sugar ( i made it with out sugar as well)
 250 grams of walnut chopped
 2 table spoon of lemon juice
 mince the prunes
 and the sugar and lemon juice and the walnuts  ,wet your hand and work it all tugeder,
 wet your hand 's again and form a log  i  think 4 or 5  logs  from your wet hands it will be nice and shine
 place the logs on a tray then in the oven on 100 for 1 hour  let it cool in the oven then leave it on the bench top  on the rack
 for at least 3 days ,so you cen slice it nicely   then you put them in an airtight dish  last for ewer
  hope you all like it  i alsow made it with apricot and pistacio-- date and walnut-- pear and walnut all works well
