Raisin Cookies
Makes around 30
Ingredients
1 1/2 cups raisins
1 3/4 cups plain flour
1teaspoon baking powder
100g soft butter
100g molasses sugar or dark brown sugar
1egg
Preparation
Set oven to 180
Place butter and sugar into bowl. Speed 3/4 1 minute.
Add in egg. 15 seconds, speed 3.
Add dry ingredients and raisins.  :: until mixed. Probably only a few seconds as you don't want to smash up the raisins.
Put large teaspoons full of mixture onto a prepared tray.
Bake for 10-12 minutes in oven.
Cool on tray.

The molasses sugar gives these biscuits the flavour. It can be bought in Coles and Woolworths. It is Billington's brand. I often use it to give lots of flavour in baking.
May all dairy items in your fridge be of questionable vintage.

This sounds easy, I have bought some Capilano Molasses, I don't have any raisins on hand might substitute with dates.

I shouldn't read this, am trying to give up added sugar and sweet treats, but have lots of raisins!

Bake them for visitors DJ, it's nice to use up what we have in the pantry. What's your willpower like?

In oven now, need to take a tin tomorrow as a present. Pic later.
