This recipe was posted by Narelle elsewhere so I have given it it's own thread so that it doesn't get lost

Banana Pikelets - low fat August 08, 2009
      
This recipe is from Symply Too Good To Be True No 3 cookbook.  We often have these for breakfast.

Ingredients:
2 egg whites
1/4C sugar
2 ripe bananas, broken in half (can use more)
1/2tsp bicarb
1 1/4C SR flour (I use 3/4C wholemeal and rest white flour)
3/4C low fat milk

Method:
Egg whites and sugar in to TMX bowl and mix 10 seconds, speed 4.
Add bananas and mix, 5 sec, speed 4.  You can do longer, but we like them a bit chunky.
Sprinkle bicarb over and mix, 5 sec, reverse speed 1.
Add flour and milk and mix, 30-40 sec until combined, reverse soft speed.  I use the butterfly but wouldn't matter if not.

Put spoonfuls in lightly greased fry pan until bubbles appear, turn and leave until cooked.  Voila.  YUM.

Thanks JD - made these for my girls and their friend who had a sleep over last night - gobbled up!!!
I made a double mixture, and they were very thick so in saying that, I could've made a single batch with some extra milk.  I also added some cinnamon - will be a regular at our house.
Might add some choc chips to the leftovers and use for morning tea :)

Glad you enjoyed them Tam, it is Narelle's recipe - I just copied it here from another thread so that it wouldn't get lost.

I made these today (our banana palms are finally producing)!!
They turned out lovely. I used whole eggs and swirled a bit of milo through the mix at the end (so not quite as healthy as the original), I left out the bicarb. I processed the whole recipe in one (lazy) hit, I added a sliced bit of banana to each one so it had some definite banana bits in it. Thanks for the recipe!

I'll give this a try (maybe in the morning) as I have had no success with banana pancakes so far.
