Basil Meat Loaf (with photo)

I am sending the basil meat loaf recipe as I promised  ;)
It is very tasty
You can use any kind of cheese slices you wish but if you like smoked cheese I'd recommend you to use that cos for me it matches very much. It depends on one's palate though
I hope you like it  :)


Basil Meat Loaf:

Ingredients:
150g parmesan
500g minced meat
100g bread crumbs
3 eggs
1 onion
2 carrots
2 potatoes
200g green peas (I used frozen ones)
25g TM veggie stock
15-20 basil leaves
600g water
Cheese slices (I used smoked cheese)
Salt

Preparation:

    * Cut parmesan into chunks and then grate it for 15 seconds speeding up from 2 to 9
    * Add minced meat, bread crumbs, eggs and salt. Mix for 1 minute on Speed 4 and then 1 minute for Speed 5
    * Prepare your meat loaf in a rectangle form. Put it in Varoma bowl and cover with basil leaves
    * Cut onion, carrots and potatoes into chunks and put in TM bowl. Add green peas and veggie stock, cook for 5 minutes at 100°C on Speed 1
    * Add water. Place Varoma bowl and close Varoma Lid. Cook for 40 minutes at Varoma Temperature on Speed 1
    * When cooked, get the basil leaves and add them into the sauce in TM bowl. Blend it for 30 seconds on Speed 8-10.
    * Cut the meat loaf into slices (I’ve got 20 slices)
    * Place them in oven tray which is previously covered with wax paper
    * Place cheese slices over. Grill them in the oven until cheese starts to melt
    * Put them into serving plates, pour some sauce over and serve

Hints: I had some sauce as leftover the day after. I've mixed it with some cheese and used as pasta sauce. Very tasty!

After cooked, I grill only some slices that we would eat
When you grill the rest the next day they don't taste like leftovers at all
This way you can take a day off from cooking  ;)

Just a quick tip - the parmesan will grate better using Turbo button for a couple of short bursts, rather than increasing the speed gradually - you never get any chunks caught on the blade using Turbo.

The reason that I am doing gradually is that it is written so in Io e il mio Bimby book
I thought I'd damage it if I used Turbo for hard stuff  :-))

I recently went to a varoma cooking class and one of the dishes prepared was the meatloaf from the EDC.  I was really surprised to see it turn out so well.  I really like the sounds of this one, but I'll have to try it with chicken mince as I still can't eat red meat . . .I guess you could say I'm pretty ticked off!! (tick bite induced allergy to beef, lamb, pork . .bah! Humbug! >:()

I agree Goldfish, I was impressed with the EDC meatloaf too, so this one is very appealing, thanks for bumping :)

I had a chuckle as this is one of the recipes I have chosen to possibly make for this challenge.

I just made this for my 8 children and husband. They gave it a 5/5. It was delicious and easy. Perhaps a little different, but that works in its favour. Yummy. Will add this to our rotation. Thank you to farfallina for posting. :)
