K9 was a bit disappointing his tail broke off all but one but the others are great

tried two doughs today - the shortbread is definitely too buttery to work - I am sure they will be delicious though.

The second one is this one - my own doh!) and that is definitely the type of dough so I might try to tweak it into a chocolate flavoured biscuit with the same proportions of egg/flour/butter http://cafedisarray.blogspot.com.au/2013/12/thermomix-gingerbread.html

In the meantime isn't this just the crankiest little biscuit you have ever seen?

I hope this isn't in the wrong place - I could not see a separate biscuit baking section - I need some suggestions please for the best cookie/biscuit dough for shaped biscuits - I have a special new set of spring loaded themed cookie cutters and I need to give them a try.

So a dough that will hold the shape after it is cut and indents are pressed in is what I need. Help please? :-\

Flavour - not averse to gingerbread/shortbread - I thought at first nut flavours wouldn't work but I guess if they were ground in the TM it would be fine. Choc chip won't work but chocolate flavoured might. Open to ideas and I will post a picture of the results

We intended to have this with store bought tikka paste last night but at 5pm I could not find it so I made the tikka paste as well. We have frozen it in ziplock bags - thanks for that suggestion.
I increased the chicken to 900g and put it on the stovetop while I used the TM to steam the rice, also wanted more vegetables in the meal so I added cauliflower, pumpkin and peas and lower fat - replaced 400ml of the cream with 400g light coconut milk. It was fabulous - great recipe - thanks for the inspiration  ;D

We are serving this tonight with a salad of baby spinach, shaved cucumber and red onion and salmon gnocchi

Place 1 clove garlic and a teaspoon of capers in TM31
Chop 3 secs speed 7
Add juice of one lemon, 20 ml water and 30 ml olive oil
Blend 10 secs speed 6

That's all

Number of People: 4
Ingredients:
500g turkey mince
1 spring onion
handful of coriander
1 tblsp sweet chilli sauce
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp chilli powder
1 slice wholemeal bread
1 egg
1 tsp sesame oil



Preparation:
Place bread in TM31 grate 10seconds at speed 8, remove and set aside
Chop spring onion and coriander for 4 seconds on speed 7
Add all ingredients to bowl (bread too) and mix 2 minutes at speed 2
Turn out and form into 8 balls

Fry until golden


Tips/Hints:
These are worth 3 Weight Watcher Pro Points if they are dry fried

We have bought a pouch of raw crab meat - anyone able to tall me how long to cook it for? in the veroma or the rice basket?

Soups / Curry Coconut Cauliflower Soup

Curry Coconut Cauliflower Soup

half a large onion peeled
half a cauliflower broken into florets
one leek end cut off and chopped into 2cm segments
30g ghee
1 tblsp TM stock base
1/2tsp curry powder
600 ml water (reduce if you need to depending on amount of cauliflower)
1 can coconut evaporated milk
1/2 tsp salt
a good shake of tabasco sauce


Place in TM31 chop at speed 7 for 4 seconds
Add ghee and cook at 100 deg speed 1 reverse for 2 1/2 minutes
Add cauliflower followed by all other ingredients

Cook at 100 deg speed 1 for 20 minutes

Blend for 40 seconds on speed 8
Taste and adjust seasoning

Serve with crispy buttered toast

Put 1 clove garlic in in the thermomix and chop at speed 7 for 3 seconds

Insert butterfly

Add:

Freshly ground pepper
Salt
3/4 cup olive oil
1/4 cup lemon juice
2 tablespoons balsamic vinegar

Blend at speed 4 for 1 minute

pour over leafy greens and enjoy!

It makes just over 600ml and will keep for 3-4 weeks in the fridge

Cakes / Frangipani cake

I was not sure whether to list here or in the special diets (gluten free) part of the forum but here goes

200g white sugar
zest of 2 lemons
200g butter
4 eggs
30g cornflour
200g ground almonds
16 raspberries

Put sugar and the lemon zest in the TM31
process 4 seconds on speed 10
Add butter and process 30 seconds on speed 5
add eggs one at a time and mix on speed 5 for 5 seconds after adding each egg
Scrape down sides, add almond meal and cornflour
Process 20 seconds on speed 5 then scrape down sides and process another 20 seconds on speed 5
Pour batter into a 20 cm cake tin - I used my CT silicon pie mold
Place raspberries on the batter - I used frozen raspberries but fresh would do as well
Bake at around 175deg for 25 minutes until the top is golden and cake is cooked through
