Chicken and Cashews with Coconut Satay Sauce and Coconut Rice
Serves 8

This is an all-in-one meal - while the sauce is cooking in the jug, the coconut rice is steaming in the basket above it, and the chicken and veges in the Varoma tray on top.  This is one of our favourite quick-and-easy meals... when I don't feel like cooking, I can have this on the table in half an hour. I start the rice cooking and chicken cooking while I chop up the veges, adding them as I go. (Adapted from the Chicken and Cashews recipe in the Thermomix Everyday Cookbook - but with my coconut satay sauce!)

The first 3 steps, marinating the chicken, can be done ahead of time for more flavour - but if you're doing it at the last minute like I usually am, don't worry, it still tastes good!

1. Cut chicken into smallish cubes (about 1.5cm square) or slices and place in a bowl:
- 300g - 400g chicken breasts or thighs

2. Chop in Thermomix bowl for 5 seconds, speed 7:
- 1-2 cloves garlic
- 1-2 cms fresh ginger

  Scrape out with spatula and mix with chicken in bowl.  (Don't wash out Thermomix bowl.)

3. Add to chicken, mix in, cover, and set aside:
- a couple of tablespoons of tamari or soy sauce
- a splash of sesame oil


4. Pour into Thermomix bowl:
- 450g coconut cream (1 tin)
- 750g water


5. Sit lid on top of jug, and rice basket on top of lid. Set scales and weigh rice into basket:
- 400g basmati rice (or less if you're cooking for less people)
    Remove basket and lid, rinse rice under tap (in basket), place basket in jug, then replace lid and lock into place.

6.  Place Varoma tray on top of lid, tip chicken into it and spread out so there's holes open for the steam to come through.  Start cooking at Varoma temperature, 20 minutes, speed 4.

7. Meanwhile, chop up the veges and place them into the Varoma as it's heating up.  I start chopping the harder veges first and put them in as I get them chopped, leaving the ones like snow peas, capsicum and shallots until the end.  Make sure there's a hole in the middle for the steam to get through.  Here's a list of suggested veges - use what you've got:
- some thin wedges of onion
- 2 stalks of celery, leaves removed, thinly sliced
- 2 carrots, thinly sliced
- broccoli, small pieces
- green beans
- chinese cabbage, thinly sliced
- boy choy, thinly sliced
- red (and/or green) capsicum, thinly sliced
- snow peas
- shallots, sliced and sprinkled on top


8. Sprinkle over the top of the veges:
- some sesame seeds
- a handful of cashews (roasted or raw)
- a dash of sesame oil
- a dash of tamari (or soy sauce)


9. When the time's up, remove the rice (placing in the Thermoserver to keep warm), and stir the chicken and veges, breaking the chicken apart and making sure there are holes unblocked for the steam to get through. Cook for another 5 or 10 minutes on Varoma temperature, speed 2, checking that the chicken is cooked through.  You may need to add a little more water if there's not much left in the bowl.  Once cooked, remove Varoma tray while you finish the sauce.  (Tip: You can take the lid off the Thermoserver with the rice in it, and sit the Varoma tray on top so they both stay warm.)

10. To the juices and coconut cream left in the bowl, add the following ingredients and blend on speed 9 for 1 minute:
- a couple of handfuls of raw cashews
- 1 inch of fresh red chilli (or more if you like it hotter)
- a good handful of fresh parsley or coriander
- 2 cloves of garlic
- 1 inch of fresh ginger
- a couple of tablespoons of tamari (or soy sauce)
- 1 teaspoon of Rapadura (optional)
- a tablespoon of chicken stock paste (or vege stock paste)

(I don't measure - just chuck in what you think, blend it, taste it, and adjust if necessary!)

Serve immediately - rice, chicken and veges with cashews on top, and sauce drizzled over liberally!

Opi2kenopi: It would feed several hungry adults easily, and I probably used half the stated amount of rice.

Quirkycooking: I often feed 10 adults with this meal, using the full amount of rice (with a breadroll each and maybe a bit of salad).
Can use macadamias for the satay sauce instead of cashews.
Yes, coconut milk works fine.

Cuilidh: I made this with tofu yesterday and also made naan bread to go with it - the tofu version was gorgeous - thanks for the recipe.  I simply substituted tofu (I had a 350 g block of firm tofu) wherever chicken was mentioned.  I did marinate the tofu for a couple of hours at the beginning, though, and I think that helped.

Maddy: I used chicken thighs, and because I cut 700g, all up I cooked them for 30-35 mins.
My veggie supply was really sparse, so I used 500g of frozen veggies, and cooked that for the same time on the top varoma dish.  All cooked perfectly.

nola276: Made this today for lunch except that I used fish in parcels instead.  Drizzled the marinade over the fish parcels and then sealed the foil.  Popped them in the bottom of the Varoma, put the veges in top, rice in basket and made the sauce at the end.

rostess: I made this last night with peanut butter and it was delicious!

Mrs KK: I substituted Coconut milk for carnation light & creamy coconut flav evaporated milk and quinoa instead of rice (to keep the calories down)... This will definitely become a regular in our house. I did everything else as instructed in the recipe although I used more chicken and had to increase the cooking time.  

Droverjess:Made 300 g rice quantity, but full quantity everything else.
 Only had 250g creamed coconut.
Used 280g cooked chicken. Marinated and put in top bit of varoma for 10 minutes.
Used onion, leek, carrot, sweetheart cabbage, 4 mushrooms and a T of frozen shallots.

Blackwood:I'm not a fan of coriander, so I used parsley instead, and as I said, only a little bit of chilli paste (the stuff in a tube from the produce section of Woolies)

INAID:I use about 500g chicken and reduce the rice by half. Otherwise it feeds an army!

LauraTO: The sauce is really nice the next day with salmon done in the varoma.

Meganjane: I decided I'd make this tonight, but after reading the recipe, I changed it. Since I was experimenting, it's not perfect, but the resultant meal was delicious.

Chicken& Vege Satay

1 shallot, peeled and halved
1 red chilli, chopped (de-seed if you don't like heat)
2 cm piece fresh ginger, sliced
1 Tbsp raw sugar

Chop all on speed 5 for a few seconds. Scrape down and add 15g oil. Sauté on Varoma for 3 minutes, speed 1.

4 Chicken Thighs, sliced into 2cm by 1/2 cm strips

Add chicken to bowl and sauté on Varoma for 5 minutes, speed 1 to 2. Use spatula to move chicken around as necessary.

While cooking, cut up vegies - 2 carrots, 2 sticks celery, broccoli, 1/2 onion, 1/4 Chinese Cabbage and 3 spring onions.

1 x 175ml can Coconut Milk + 1 can of water
3 Tbsp TM Nut Paste
2 tsp Vege or Chicken Stock
2 Kaffir Lime Leaves

Add the above to the bowl with the chicken and cook for 5 more minutes on Varoma, speed 1.
Remove from bowl and place in Thermoserver.

Don't rinse bowl. Add 1 litre hot water

Measure out 250g Jasmine Rice into basket and rinse under cold water. Place basket into bowl and place harder vegetables (carrot, celery, onion) into Varoma Base. Place broccoli into Varoma Tray.
Leave cabbage and spring onions until later.
Programme TM to cook on Varoma, speed 3 for 16 minutes. After 10 minutes, place vegetables from basket into Thermoserver with Chicken. Transfer broccoli to base and place cabbage and spring onion in tray over the top. Continue cooking.

When time is up, transfer remaining vegies to Thermoserver and mix well. Place rice into a serving bowl.

I guess because it's such a versatile meat, and the cooking estimates are more consistent than red meat.

Yes, we find that we often have heaps of chicken meals. I have to be conscious of throwing in some beef ones occasionally.

I was half way through eating this delicious meal before I realised I'd forgotten to take a photo (so unlike me!)!  Thanks for the recipe Jo, we all loved it.  Using the cashews in that manner is different to anything we've had before in this family, but from what I read it's very common to blitz them up for dairy free 'cream' sauces etc.  It was smooth and creamy and lovely.

I have given it 5 stars in my recipe program on my computer and added it to my regulars list!  ;D

I must say the way you explain very step is very easy to understand.

I made the tzatziki from the EDC and the lemon from the list was missing from the method 
I know some of my friends would have panicked and not make it

Yep, just as good for leftovers for lunch the next day!!   ;D ;D (she says licking the last drop of sauce from the fork  ;) ;) )...

I meant to say in my earlier post that the meal is really filling.  It would feed several hungry adults easily, and I probably used half the stated amount of rice.  It's good to know that the TMX is capable of making a fabulous meal big enough for many people.

I love using the 'whole Thermomix' for meals - it makes so much!  I often feed 10 adults with this meal, using the full amount of rice (with a breadroll each and maybe a bit of salad).  We've never found the Thermomix too small for our family of 6, plus whoever else is visiting!  :)

We had this for dinner last night and it was so easy to make and absolutely delicious.   I was thinking that it would work with tofu instead of chicken for a great vegetarian ( or even vegan?) meal.

I'm sure it would work with tofu, or with cubed fish, or just all veges and lots of cashews for protein! I have done it with almonds instead of cashews, but I like the cashews better.

We also had this for dinner last night and I wasn't sure if all my boys would eat it, especially with the Ginger garlic and chilli etc. Much to my delight and surprise, there were clean plates from everyone. There was also enough sauce to put in a container and in the freezer for maybe satay sticks or something for another meal. Thank you Jo, you are a legend ;D

This is soooooooo delicious i loved it and so did the rest of the family. I used a huge handful of coriander and the sauce was a Minty green colour and so so tasty  :) thanks so much

YAYYY!!! I 'm so glad you all like itl, and that I finally got around to posting it! :)  It's been a family favourite for a while now, and I've changed it as I've gone along, and done many different variations.  Sometimes the sauce is really green (like yours Meagan), sometimes not, depending what I've got to put in it.  That's great the tofu worked well - it would be nice with tempeh too, wouldn't it!

I am really wanting to make this tonight, but don't have any coconut cream.  I saw on your blog that you have made coconut cream for this recipe Jo.  I would love to know how you did it.  :)

P.S - I have a can of coconut milk.  Could I use that instead?

Hi Chelsea,
Yes, coconut milk works fine! Otherwise you can make your own coconut cream/milk by grinding up 100-300g dry coconut (sp 8 until fine) then add 3 x as much water, cook until steaming (100 degrees, sp 4), blend 30 secs sp 8, then strain through a muslin lined seive/nut bag. The milk you squeeze out should be nice and thick. You can set this aside and repeat the recipe with the coconut pulp (adding same amount of water) and you'll get a thin coconut milk. For 'coconut milk', mix the two milks together; for 'coconut cream', cool the thick milk and scoop the cream off the top.  (recipe from Indian cookbook)

The other option is easier - use Helene's amazing coconut butter recipe (http://www.superkitchenmachine.com/2011/11949/make-coconut-butter-thermomi.html) and add some water at the end to make it the consistency you want - strain if you like. :)

Thanks Jo.  Just realised I am almost out of cashews now.  One of those days!  :-)) :-))  Hopefully Hubby can buy some on his way home.  I have peanuts, but am guessing cashews would blend better and be creamier.  :)

We all loved this delicious recipe - thanks Jo. As you can see I also used roasted cashews in with the vegs.   :)  :) Have made it previously but I am trying to get into the habit of pics prior to the plate being emptied  :D  :D  :D  :)  :)  :)

I would love to get my hands on any book Quirky Jo wrote it would be excellent - however writing a book is a huge undertaking.  A friend of ours recently wrote / photographed / published a fabulous book all by himself - it took over 7 years and he was totally drained at the end.  He was let down on many fronts by people who had undertaken to assist  him, including several photographers.  Eventually he ended up going into the city and purchasing cameras, lights, reflectors, etc. etc. then he spent ages teaching himself how to stage photos and taking them so that they illustrated precisely his requirements.

However, having said all of that, his book had a limited run of 1,000, is unique in its genre in Australia and he is very proud of what he did (and rightly so - we are proud of him as well!!).  So Jo, if you go ahead you know you have a customer base of thousands who will be eagrly awaiting your final result.

Wow, 7 years… eeek!! I would be doing most things myself I think, as I'm a graphic artist by trade & have done all the artwork for books before, just not my own! I have a light cube from when I was selling on ebay - they make life easier as you can photograph when you have the time! Mine was fairly cheap on ebay and works well!

A big thank you Jo for posting this recipe.  I have been seriously needing some inspiration for using the TMX for dinners, I tend to stick to my old ways for dinners and use it more for food prep as I hadn't found a recipe I really loved.  This recipe was exactly what I needed, it was sensational!
Now, what recipe to try next that is going to compete with that one???!!!  Any thoughts?   :)

You are right up my alley with food, actually judging by your blog you are right up my alley with lots of things!  I have high hopes of home schooling too but not sure if I am patient enough!  I have settled for second best at the moment and have gone with a very special Steiner/Waldorf school.
I am basically grain free although I do give the rest of the family rice/quinoa though not more than once a week or so.  Basically, we just love meat and vegetables and any nice ways to prepare them.  I don't have any fears of fats (except the horrible hydrogenated ones/unhealthy vegetable oils) I guess we just try to eat whole, real foods similar to what our great grandparents would have.  Sorry, I am probably not giving you much info to go on!
Recipes that usually have rice with them are ok as I just serve them with cauliflower rice instead.  I have just found that a lot of the recipes for the TMX dinners are very wet and rely a lot on rice to soak up the liquid.  I like a bit of substance in my meals!   :)
Also, I don't like using cornflour etc for thickening so I am struggling with that at the moment.  I need to experiment with kudzu etc instead but haven't ventured with that in the TMX yet.
I need to go through your blog again and dig out some more of your faves.  Thanks so much for all the time and effort you put into your love of TMX and nutrition and helping out others, you are my food idol!   :-*

Aww, thanks Tarosuma  :-* :-* :-* Sounds like we have a fair bit in common! I know I feel at my best when I limit grains, but I do find I get hungry a lot more, unless I have plenty of potatoes (which my naturopath tells me I shouldn't)...  We like 'comfort food' type of meals best I think - rich casseroles with mashed potato/sweet potato or pasta, thick soups, lots of meat & veges...
One of our favourites is Sausage Casserole with Dumplings (http://quirkycooking.blogspot.com/2010/07/sausage-casserole-with-dumplings.html) - you could make this with mashed potato on top instead of the dumplings (a bit like a shepherd's pie) & it would be delicious!

Not worried about fats either, just as long as they're wholesome - totally not worried about 'fat free' stuff, yuk! :) Do you use arrowroot instead of cornflour? I haven't tried kudzu, that would be interesting.

I add more meat/veges to a lot of the tmx recipes in the books because I find them too saucy too. Have you tried the Beef Rendang in the EDC? It's so delicious, but just add more meat and use coconut cream, (and reduce the amount a bit if you like) because it's very saucy!


I would suggest some more recipes but my brain is dead tonight!! I'm sure you'll find plenty of good ones on here - you could always start a thread asking for grain free meals... :)

I just wanted to say to Quirky and Tarosuma, that I am so with you on your eating endeavours!! I am a registered nurse but like to say that I have 'seen the light' after my first visit to a Naturopath and am reversing everything i ever thought I knew about food.. So much so that I am studying to be a Naturopath!! I love my 'Dobbie' because I can avoid all those revolting 'numbers' and make things myself like mayo and nut butters and curry pastes.. Tonight I am making this fantastic sounding chicken dish, so off I go!!

Hey just a tip I learnt from my brother's ex g/f who's Chinese, when you're stir frying chicken if you coat the chicken (just enough to coat, not drown) in slightly beaten egg white, it helps retain the moisture in the chicken whilst cooking.  Here's a link to info about it, though they add other stuff as well.  I would think it would work for this dish too. I'm not saying it was dry, but it's even nicer after coating with egg white first.

This was the first main meal I made in my new Thermie (on my own) it was delish! My sauce was a little runny but I did use coconut milk instead of cream.  Will definately make again!

The first meal I made in my thermie George when I got him about 6 weeks ago, and I've made it nearly every week since!  I usually use coconut milk instead of cream, and have also made the sauce with basil which was delicious.  Tonight I had chicken thighs, carrot, onion, broccolini, and shallots for the main dish, and I used parsley for the sauce.  I've made the sauce with coriander, parsley, and basil now and I think the basil one was tastiest, but I have a massive bunch of parsley in the fridge that I picked up for $2.50 at the market on the weekend so I'm trying to use it up.  This meal normally takes me around 45 minutes all up if I am cooking it alone (faster with my chef husband who chops things like a tornado), but it's worth the wait.  It's my favourite thermomix recipe so far for sure!

Well, believe it or not, I finally got around to making this much talked about and loved recipe.  Now I can see what you have all been on about and can join the ranks of those who loved it.  Thanks Jo. I only made enough for 4 so that we would have leftovers for Tuesday night after a day babysitting and not wanting to cook when I got home. I cut my chicken fillets into 3cm wide strips so that they wouldn't be over cooked and this worked perfectly.  No photo, battery went flat.  Thanks Jo  :-*

Zelda, I don't think coconut butter would work so well - you can make your own coconut cream to use in it though, if you like? The coconut butter should be okay in bikkies instead of the oil, although I would probably use half coconut butter, half macadamia/grapeseed oil, otherwise they'll be hard and maybe the mixture won't be wet enough to hold together. If you're concerned about the cost of coconut oil, try buying it bulk online - say a kg or 2 at a time (go halves with someone!) - it's heaps cheaper. :)

Made this today for lunch except that I used fish in parcels instead.  Drizzled the marinade over the fish parcels and then sealed the foil.  Popped them in the bottom of the Varoma, put the veges in top, rice in basket and made the sauce at the end.  I thought it was to die for.  Unfortunately DH didn't like it at all.  I am really disappointed in him as I feel it was a restaurant quality meal.  He's a bit of a pie & sauce man ;D.  I would have loved to make this and serve it to friends, but it will have to be when DH isn't home ;D.  Great recipe, thanks so much.

A question on this recipe. 

I cooked this for dinner a couple of days ago, except that I substituted steamed fish instead of chicken.  I just loved it, (I mean super yum) but unfortunately DH didn't like the sauce at all.  I think it may have been the ginger in it. 

I had already cut down the quantity of ginger I put in, but it still got a resounding bleurrrr from him.  I just loved it, and am disappointed that I won't b e able to cook it again. 

I wonder if it would be o.k. to leave the ginger out altogether, or should I substitute something.  He has a rather sensitive tummy and can't have anything too spicy - what a pain, but I still love him. :D

It's funny actually. This recipe has made us all decide that we should try cashew nut butter as a spread. We found this much more enjoyable that the previous satay sauce we made (I did a quick search and can't find which recipe it was) which was delicious but much too rich.

Thanks to CP63's favourites list - I made this for the first time last night. YUM YUM YUM was the families response. DD has taken the leftovers for lunch today. I substituted Coconut milk for carnation light & creamy coconut flav evaporated milk and quinoa instead of rice (to keep the calories down)... This will definitely become a regular in our house. I did everything else as instructed in the recipe although I used more chicken and had to increase the cooking time.  :D

This would be a great recipe for the $100.00 challenge because you can make a huge amount to have either in the freezer or left overs the next day.

Tonight I steamed up some fish and veggies, to have with the left over coconut rice & satay sauce from this recipe last week, -it was delicious! And so cheap and easy!

I decided I'd make this tonight, but after reading the recipe, I changed it. Since I was experimenting, it's not perfect, but the resultant meal was delicious.

This is what I did:

Chicken& Vege Satay

1 shallot, peeled and halved
1 red chilli, chopped (de-seed if you don't like heat)
2 cm piece fresh ginger, sliced
1 Tbsp raw sugar

Chop all on speed 5 for a few seconds. Scrape down and add 15g oil. Sauté on Varoma for 3 minutes, speed 1.

4 Chicken Thighs, sliced into 2cm by 1/2 cm strips

Add chicken to bowl and sauté on Varoma for 5 minutes, speed 1 to 2. Use spatula to move chicken around as necessary.

While cooking, cut up vegies - 2 carrots, 2 sticks celery, broccoli, 1/2 onion, 1/4 Chinese Cabbage and 3 spring onions.

1 x 175ml can Coconut Milk + 1 can of water
3 Tbsp TM Nut Paste
2 tsp Vege or Chicken Stock
2 Kaffir Lime Leaves


Add the above to the bowl with the chicken and cook for 5 more minutes on Varoma, speed 1.
Remove from bowl and place in Thermoserver.

Don't rinse bowl. Add 1 litre hot water

Measure out 250g Jasmine Rice into basket and rinse under cold water. Place basket into bowl and place harder vegetables (carrot, celery, onion) into Varoma Base. Place broccoli into Varoma Tray.
Leave cabbage and spring onions until later.
Programme TM to cook on Varoma, speed 3 for 16 minutes. After 10 minutes, place vegetables from basket into Thermoserver with Chicken. Transfer broccoli to base and place cabbage and spring onion in tray over the top. Continue cooking.

When time is up, transfer remaining vegies to Thermoserver and mix well. Place rice into a serving bowl.

Sounds tricky, but it's not at all. Sorry, no photo as we scoffed it!

I just realised that this is the first Quirky Jo recipe I have made!!! :o

Well, I can now say with certainty that I will be making many more :D

It smelled absolutely delicious, it was super simple to whip up before SD had to go to band practice, and mum's only complaint was that she didn't like steamed celery ;)

Oh my goodness!!!! I cooked this last night...and it was delicious! Really really good! It looks tricky when you first look at the recipe...but it is really straight forward and quite simple to make! If you haven't made this meal yet, I would encourage you to try it! (I reduced the chili a fair bit for young children)

it smelt delicious as it was cooking...and the sauce...OMG...unbelievable! Luckily there is lots of sauce as well as rice left over, so I plan on cooking some more chicken and vegies and using it up in another meal. Dee-lishious!

I will most definitely be making this again!  ;D

We had this for lunch.
Made 300 g rice quantity, but full quantity everything else.
 Only had 250g creamed coconut.

Used 280g cooked chicken. Marinated and put in top bit of varoma for 10 minutes.

Used onion, leek, carrot, sweetheart cabbage, 4 mushrooms and a T of frozen shallots.

Very good.

Leftovers will be reheated for supper tomorrow.

Yes kimmyh, you should give this one a go! I'm not a fan of coriander, so I used parsley instead, and as I said, only a little bit of chilli paste (the stuff in a tube from the produce section of Woolies), and i just used whatever vegies I had in the fridge (not exactly the same as the ones in Jo's recipe)

I think I was particularly impressed with this recipe because it is so different to what I usually make. I do cook a fair few stir fry meals, but I generally cook a ginger/garlic/soy/honey kind of sauce...and this one was just so different!

My husband was very impressed with it and my 4 and a 1/2 year old loved it too (my 2 year old is a fuss-pot, and even he ate most of it!)

Give it a go next time you're up for trying a new recipe and tell us what you think!!!

I'm not fond of coriander either, but it doesn't bother me in this recipe - I started off all parsley, then went to 50 / 50 coriander and parsley but then went to straight coriander.  Give it a try, you may be as surprised as I was.

Had this for dinner and I have only had my thermomix for one day. It was so lovely. I cooked the recipe as written even though they are only 2 of us but will have lunches for a few days. If I can do it, anyone can. Thank you for a fantastic recipe and its one we will have often.

Is the sauce supposed to be on the thin and runny side? I did add a little water to it while cooking the chicken and veggies the second time but I got quite a runny sauce so I threw in about 3 handful more of walnuts to thicken the soup a bit. But could be made a bit thicker with some corn flour probably...

No it's not really thin and runny and definitely doesn't need thickening. Maybe the extra water made it that way. When I cook this, I only have a little bit of water left in the bowl after the rice and chicken/veggies ate cooked.

I made this the other night and it was loved by everyone.  Did have to triple it so cooked the meat first in 2 layers then the veges in 2 layers, then finished the sauce.  We will definitely be having this again.

Made this tonight and it was delicious! I think quirkyjo's family must be rice monsters because I would do maybe half the rice, or less, next time. Also less parsley for the sauce because my sauce was a bit too green looking. Next time I need to be more careful to make holes for the steam. My chicken took a lot longer to cook because I don't think I was careful enough with that.

The leftover rice is really nice the next day with just the green sauce poured over 😉 Both the sauce and rice freeze well (separately) too.

Yep it feeds an army. This is one of the very few dishes where there may be leftovers (usually some rice and sauce and a few bits of veg) for me for lunch the next day.

I didn't realise this recipe was on this forum - I got it from Jo's blog site.  It is absolutely delicious - one of our favourite TM meals.  I always make the full quantity of rice as I love leftovers :)

This is one of my favourite dishes but for some reason hadn't made it for a long time so cooked it up at the weekend.  I use tofu instead of chicken as I am vegetarian and tried something different this time - after marinating the tofu for 10 - 15 minutes, I tossed it into an oven dish and roasted it for 10 - 15 minutes, it was really nice.   I might try it with chick peas or cannellini beans next time instead of tofu.

This makes more than enough for two meals.

Thank you, Jo. This was the first meal I cooked in my new machine. I love how it all came together so effortlessly,  it will be just the perfect dish for those too-hot-to -ook (or breathe) days ahead. 

I was blown away by how perfectly the rice cooked, and I love how I was able to fit in so much veg. Next time, which will be soon, I think I'd like to replace the soy sauce with fish sauce and introduce lime somewhere, zest, leaves, juice? in the sauce, on the chicken?, not sure yet. Just a personal preference for that flavour combination.

Another meal that I have revisited after not having cooked for ages! Still delicious, although I'm still not adept at managing steaming everything properly. Cut my chicken a bit bigger than stated so then had to cook a little longer and the rice became a bit overdone. Ah well, my goal for this year is to use the varoma more, so will revisit this recipe again soon!

BTW, I cooked the 400g of rice and 600g of chicken and in our house, that fed 5!
