Name of Recipe: Zucchini & Rice Pie
Number of People: Serves 2 but will serve 4 as part of a meal - it can be doubled
Ingredients:
45g cheddar cheese cubed
250g zucchini - cut into 5 cm chunks
50g red onion
small handful parsley, remove stems
1 egg
40g uncooked long grain rice
1 tblspns olive oil
S & P to taste
2 sheets puff pastry, thawed
Preparation:
Preheat oven to 190oC fan forced.
Grate cheese 4 sec/speed 8. Remove from bowl.
Add onion, zucchini & parsley to TM bowl and chop 2 sec/speed 5.
Add grated cheese, egg, rice, S & P and oil.
Mix 3 sec/reverse/speed 5.
Line a 20cm quiche dish or tin with pastry (I used a fluted, loose bottomed one). Trim excess, pour in the filling and brush the top of the sides of the pastry with milk before topping with the remaining piece of pastry. Make 4 slits in the top with a knife. Brush the top with milk.
Bake 30 mins, remove the pie completely from the fluted tin (if using) and bake a further 10 minutes to crisp up the bottom of the pastry.
Converted and adapted for the Thermomix from Hugh Fearnley-Whittingstall's River Cottage Veg Everyday.

Looks delicious Judy, especially as it is zucchini season and we are bound to be eating a lot of it soon! One question, how much rice to add?

Thanks Jamberie, have added that ingredient :-)) It's a delicious pie and a great way to use up excess quantities of zucchini. I would have liked to have made individual ones in the pie maker but of course the rice wouldn't have cooked in such a short time. Hugh did his in filo pastry but I prefer to use what I have on hand.

Yes and thanks for lending me the book Katie - now I have to buy it as there are so many good recipes in there. A vegetable book with some lovely recipes that can be served as sides as opposed to some vegie books which are more for vegetarians.

Is the rice raw or cooked?

It's raw kt2. As it cooks, it swells and takes care of any liquid in the pie ;)

I did add a couple of shallots, just because they needed to be used, but I often find photos (particularly pastry & dough) come out darker in photos :-\

This looks lovely. I am always looking for recipes that have vegies in different ways, or as a main meal. What book was it please Judy or Katie?
What a dope. :'( I know thank you as I have now looked at the bottom of the recipe.. I'm even more thrilled as I happen to know that the book will be under the Christmas tree for me from DD. She obviously made a good choice when she selected it.

You will love the book Cookie. I've sent one to DD amongst her Christmas presents and have ordered one for myself after having a look through Katie's. Amongst us all, we can fill the vegie thread here with some nice new recipes hopefully.

I made this tonight and it was lovely. Amazing how you can make something so tasty and substantial from a few ingredients. I was surprised how the rice cooked in the pie and how it solves the problem of any liquid coming from the zucchini. I would never have thought of doing that.
I served it with the corn, pancetta & chives dish from Quick Fix in the Thermomix and a green salad.
I think I over did it on the portion size and now I feel very full :-))

Made this for dinner last night and it was so tasty. Had it with veggies from DGD's garden. The zucchinis came from there as well.

We had this for dinner tonight was very very nice - as my DH says, you cant go wrong with anything wrapped in pastry. I would add more onion next time and lots of pepper but definitely a 'make again' dish

It was quite some time ago and I really can't remember if I did freeze the leftovers Uni. I can't see why they wouldn't as I do freeze my spinach & rice pie although that doesn't have any pastry. I don't think it made a huge pie so we would have eaten it over 2 consecutive meals I would have thought.

Judy - to make this without the pastry do you just go ahead as is, but leave off the pastry - or is there a different method?

Have no idea GF LOL. I think I'd make sure the dish had a lid so that the rice would cook properly though. Give it a try and let us know.

no JD i made it with the pastry , gave Eve just the filling and tash ate Eves pastry, but we did let her try the pastry and she loved it :-))

Was nearly going to make this today to take to a friends tonight but I didn't have any red onions so I made a Zucchini quiche instead.
I have book makes the recipe for next time. Sounds lovely. :)

I made this a few nights ago: once I put the filling into the pie, it didnt look like it was going to be enough, so I very quickly whipped up another batch of the filling (so doubled the quantity of the filling) and added it in.
Even with the double filling, the pie cooked really well and was very tasty.
Just because I cant help myself tweaking recipes, I was thinking of adding some chopped spinach in next time, maybe trying with brown rice, adding some fetta along with the cheddar, and maybe adding either some curry powder or sweet chilli sauce to the mixture ...........
A lovely, quick and easy recipe that I will be making again!

Glad you enjoyed it Karen. The original recipe did make a small pie, perfect for the 2 of us but doubling it was a great idea for larger families. Love the sound of your tweaks too, let us know when you try your version of the recipe

I forgot about this pie as I made it awhile ago. From memory I used 100g of cheddar, 50g of feta, 2 eggs some nutmeg and dill. It was yummy ;D

This pie was just beautiful! I put breadcrumbs ontop of moine but notice a pic with pastry. I prefer the breadcrumbs and it is yummy cold too! I also used Rice Plus just to add more nutriton. Yum doesn't describe the taste :P

I made this last week. We came home late and I had zucchini in the fridge so I got it sorted and in the oven before the kids went feral. Dh and I and our 2 year old shared the pie plus salad and there wasn't a crumb left. Thumbs up from everyone but I think dh would have preferred it with a steak on the side :)

Glad they liked it thermo18, I'm going to make this recipe for my vegetarian DD in Melbourne when I visit her next month. Will have to do it without the TMX though unless I make it here and take it over frozen.

We have a vego dinner a few times a week - with 2 boys (although the littlest isn't eating yet!) I need to cut down the food bills ;)
