Best potato for mash potato
« on: June 16, 2012, 11:25:16 pm »
Hi everyone :)

I very rarely do mash potato as a side as my kids don't like it much. I mostly use on top of cottage/shepards pie or very rarely with a meat/veg meal so I am not a good potato buyer!

Which are the best potato to use in the tmx EDC recipe? I bought Charisma ( the low gi ones ) as that is all my local supermarket had late one night. I used them and they were tasty but kind of gluey :( Or is there a better recipe?

Also if using 1/2 potato 1/2 sweet potato does it matter which potato?

Can you use 1/2 potato 1/2 cauliflower? My kids love cauliflower mash/purée.

Sorry for so many questions in the one post ;)

Thanks in advance :)
Bec

Try the red skinned potato Bec.  I cook my potatoes in the steaming basket on varoma temp until well cooked then add them back to the bowl with the butterfly in place, add a knob of butter, S & P  and mix for a few seconds on speed 4.  If it's to thick I then add a bit of milk but too much. Sometimes, depending on the potato, it doesn't need any milk added at all.

I would use slightly more white potato to sweet potato and with cauli/potato mash, equal quantities then mash with a knob of butter and add some grated parmesan cheese.

Carisma aren't great for mash. Try cream delight or Desiree instead.

I would always use King Edward or Maris Piper  :)

Any floury potato will do for mash (King Edward is tops) - the waxy varieties produce gluey mash.  Good luck.
