Yum made this for dinner.  Next time I might steam the sweet potato  while making rice.

Thanks again Judydawn, this was great!  I really liked the hint of lemon and the rice.  I made double quantity in a lasagne dish lined with baking paper.  It was great that you didn't have to roast the sweet potato first.  Sadly, only one piece left!

I tried this tonight, it was quick, easy and tasty, thinking chopped up shallots and celery would be nice as well,

Hi judy
I finally made this and it was so delicious!  :o

I had this recipe in my mind since long time. As I said before sweet potatoes are not very common around where I live. Only a few supermarkets sell them

As soon as I saw them in a supermarket I bought them! I didn't remember how much I needed so I bought 1.5 kg! I made this recipe twice so far and I still have my precious sweet potatoes :D

As you recommended I bought the largest ones I found. I used around 400g potato each time.
Second time I made it I used a small shallot instead of onion. It was like 15g. I liked that too
This gets 5 stars from me! It has already become one of my regulars!

It looks lovely farfallina.  Your sweet potato was obviously the white one whereas the orange one is more readily available here in Australia.  In fact I have never seen the white one but I'm sure it is available at the markets.  It makes no difference to the slice, apart from the fact that the orange one is probably slightly sweeter from what I have read.

This recipe sounds lovely, do you think you could cook it in the varoma, I have made omelets before, but was wondering if the sweet potato would be cooked enough, I suppose I could steam that first while the rice is cooking! Think I may have answered my own question! Has anyone tried it in the varoma, thanks nicky

I think you did answer your own question Nicky - let us know how it goes.  You may need to pop it under the griller after it's cooked to brown the top though.
