Warm Potato & Tuna Salad

This is a Justine Schofield recipe, my version.
Quantities are vague as you can make as much or as little as you need. These quantities serve 2 as a meal or 4 as a side serve.

Peeled potatoes, diced 3cm to almost fill the steaming basket but leaving room for
1 egg per person
1/2 - 1 tsp curry paste
1/2 - 1 tsp garlic paste (opt)
2 tsp chopped chives
3/4 cup mayonnaise.

Place the potatoes in the steaming basket, top with 2-4 eggs.  Place 600g boiling water in the TM bowl, insert the basket and cook 25-30 minutes on Varoma temp or until potatoes are cooked but still firm, removing the eggs after 10 minutes.  Place the eggs in cold water until slightly cool, peel and cut them into 8 pieces. I added S & P to the eggs at this stage.

Mab19 - Made this for our lunch today and we both enjoyed it.



Open 2 x 95g cans tuna in oil and drain the oil. Chop 2 tsps chives.

In a very small non-stick pan fry off 1/2 to 1 tsp curry paste and garlic paste for a few seconds, add to the mayonnaise and place the mixture in a medium sized bowl.  Add the tuna, hot potato, eggs and chives.  Toss the mixture to evenly coat everything in the mayo, test for seasonings and add S & P if needed.

Serve immediately.

This sounds really nice never thought of putting the eggs in the steaming basket , it's good to learn something everyday.

This sounds delicious Judy. My Mum always put a tin of tuna into her potato salad. No garlic or curry so this will taste just perfect. Thanks.
May all dairy items in your fridge be of questionable vintage.

Thanks Judy.This looks delicious.We love hard boiled eggs added to dishes and with the spuds it will be a winner in this house :D :D
