I only have white rum in the cupboard and don't want to buy a bottle of ordinary rum Chookie, could I use that or use some other alcohol perhaps - or even leave it out?

Judy,  I think white rum would be fine.  Brandy would also be ok.  Don't leave it out.  Could try Rum essence which isn't very expensive.

Jen,  why.  .?  Don't like coffee or can't have it.  Not really strong.  Could try chocolate or Ecco.

Our cake is almost finished. DH brought some more very dead bananas back from his Mum so I'm going to make Tenina's Aunt Debbie's Banana Bread this time.
