Title: Moist Carrot Cake

Moist Carrot Cake

Ingredients
300g carrot, roughly chopped
3 eggs
200g vegetable oil
200g brown sugar
310g self raising flour
½ tspn bi-carb soda
1 tspn cinnamon
1 tspn nutmeg
pinch salt
½ cup walnuts, finely chopped (optional, I don't bother as my children don't like them)

Preparation
1. Preheat oven to 180 degrees.
2. Grease and line 2 medium loaf tins with baking paper.
3. Place carrot in TM bowl and chop 5 seconds, speed 5.  Set aside and rinse bowl.
4. Insert butterfly and add eggs, oil and sugar. Mix 15 seconds, speed 4. Scrape down bowl
    with spatula and mix again for 15 seconds, speed 4.
5. Remove butterfly and add carrots, floor, bi-carb soda, spices and salt.  Turn to close lid setting
    and knead 20-30 seconds until roughly combined.
6. Add walnuts if using and use spatula to combine and mix in any flour that is not mixed in.
7. Pour mixture into prepared tins and bake for approximately 30-40 minutes or until light
   golden and cake springs back in middle.  Leave to cool in pans for about 10 minutes.

Notes
Adapted from original recipe found in PWMU cookbook.
Can be served as is or topped with cream cheese frosting.
Mixture can also make one loaf and 12 small cupcakes (use cupcake wrappers and cook for 30mins).
Mixture can also make 12 large muffins.
Recipe can be halved to make one loaf.

These were easy to make and a lovely and light. I've just eaten one warm from the oven and it's very tasty. I think it really needs some lemon cream cheese icing to finish them off as you suggested. I'd definitely make them again. The mix made 12 cupcakes and a smallish loaf. I cooked all for 30 mins.

Glad you liked them brumington. Yes cream cheese frosting is lovely.  If I make these to take somewhere I frost them, but if its just for us and lunch boxes, I leave them plain :)

Made this today and the texture of both cakes is lovely, although, I agree that they definately need a nice,sweet,cream cheese icing. Thanks so much for the recipe. Will definately makie it again.

I love carrot cake but DH isn't that keen.Fooled him once when I put courgettes in muffins but they were laced heavily with chocolate ;) ;D

This is a great cake recipe.
Easy to make . Very tasty and just the right amount of spice.

I froze some of the cupcakes I made from this recipe as an easy option for school lunches. I might have just had one myself (well, it's a long weekend and there's no school!) and they are STILL delicious. I absolutely love this recipe.

Just made these as Geoff's birthday cake for tomorrow's afternoon tea at the nursing home.  Will ice with philly lemon icing and turn it into 1 big cake.

Don't laugh, I am no maddy but here's Geoff's birthday cake.  My SIL has some sort of flashing light thingy to put on top tomorrow as we aren't sure if candles are allowed in nursing homes.

Cooked this today.. Tasted it when it first came out of the oven as I had an unfortunate accident and it broke getting it out of the tins whilst getting a bad cramp around my ribs of all places.. Not fun.. Anyway.. My fault as i thought my tins were stick proof lol and found it a little bland but once it cooled i quite enjoyed it.. :)

I have been asked to make a carrot cake as a birthday cake - do you think this recipe would be enough for 2 x 20cm square tins?  I am going to stack the 2 cakes on top of each other to make a higher cake, so they dont need to be that thick individually.

Karen I don't think there is enough mix for two tins. If you want a higher than normal cake, maybe try one tin and cut the cake into two layers and fill with cream cheese frosting to raise it up a bit. Just be careful that the centre cooks and the edges don't dry out.

Thanks Kim - I might try and increase the recipe by 1.5 and see how I go.  Sounds like a delicious cake, and Callum has especially requested carrot cake as his birthday cake for this weekend.

In the oven now:  but doing 1.5 times the mixture is really too much for TMX to handle.  It didnt mix properly at the end, and I had to stir everything together with a spatula.  But the mixture tastes yummy  ;D ;D

I dont know if you could cut the cake easily karen and dont think it would fit two tins as not alot of mixture.  I found it quite crumbly... Not my fav carrot cake recipe to be honest but thats me :(

Really Frozzie, i would rate it up there. It had a delicious crust and was moist the 2 times i have made it. Didnt split the mix though, just baked it in a very large loaf tin.

It could easily have been me bedlam actually it probably was lol ... I may have overcooked it as i split it but it wasnt dry but quite crumbly, just kept falling into bits and not the strongest flavour but thats me and my attempt..out of all the cakes ive made unfortunately its just not up there for me and im Not sure i would make it again but rather try another

I also made this carrot cake for work's fundraising cake day.  I kept one for myself and took the other as I was also taking the Pistachio and Lemon cupcakes.  Mine were both lovely and moist and once again, so simple.  I used a cream cheese icing for both the carrot cake and the cupcakes.  Great recipe.

I have some Philadelphia lemon frosting that I picked up on sale today. Had to make a cake to suit. The batter tasted great. The spice and crunch of raw carrot made it feel like there was crystalised ginger in there. Looking forward to the cooked result.

I've made this cake a few times but not for a long while. I'm not much of a cake eater but enjoy a piece of carrot cake every now and again and remembered this one freezes well. I think I may have overcooked it slightly but it still tastes lovely and I'll cut and freeze so I can enjoy a small piece each day. I used pecans and also added some sultanas.

Love a good carrot cake.  Kimmy always seemed to come up with delicious recipes
