Visitor for lunch , and as it is warm we are having light lunch of a platter of prosciutto, cold chicken and salads. Followed by Kefir lemon ice cream on sticks.
Have made a salad of chick peas, dried fruits and nuts, dressed with cumin lemon and olive oil.
I had baked a Rhubarb tart but will freeze this.

Nice looking cake CC.  I have kept a note of the site.

I have made a Caramel Macadamia Slice this morning.
The  man who said it can't be done should not interupt the woman doing it.

My thermomix is at home as this is such a short trip. So no cooking here. Denise that site looks lovely and the cake delicious. Thanks.

Made a Spelt and grain loaf. Put a cut lengthwise and it looked just like the ones at Bakers Delight.

Also been making lots of Kefir Passion fruit and lemon ice creams on sticks in AA moulds. In this warm weather and with fresh Kefir I am making them every couple of days. I pop them in snack bags and into the freezer. Our guest yesterday was so inspired that she bought a Mad Millie Kefir kit on the way home.
Good fun experimenting with different flavours.

Chooks laying like mad. Might make a Frittata to go with salads.
I give quite a lot of eggs away. I swap eggs and Rhubarb tarts for chook food from SIL.
I give a  neighbour eggs as he brings our rubbish bin in if we are not home. He told me that he saves our fresh eggs for eating and the bought ones for baking.
DD also gets eggs as difficult to feed skinny GS Eats 4 for breakfast at the weekends.
Free Range eggs are $10 a dozen here at the moment.

My neighbour usually gives me 4 - 6 of his chooks' eggs each week and I send over a meal as he lives by himself so it saves him cooking one night a week.  I haven't quite managed to convert him to vegan / vegetarian fare, but am working on him (he usually sneaks some meat somewhere into whatever I send over!)   BLASPHEMY!  :D

Sorry, I just realised I posted this in the wrong thread... it was the talk of eggs that I blame for this slip-up!

Last night DD came for dinner. I made sea food crepes.
I had leftover smoked salmon, leftover salmon dip, ( made in TMX), and prawns. I also added cooked Asparagus. Rolled in crepes and covered in a little cream and then sprinkled with a mix of Parmesan cheese and Panko bread crumbs.
Also cooked very large pot of Swiss chard and puréed it in TMX with nutmeg and a little butter.
Should have taken photo, looked magnificent.
For sweets, Trifle made with lady finger biscuits, soaked in Blackberry liquor (made in TMX), then cooked Pears   Then Cream.

Today, rolled stuffed skirt steak, cooked on stand in Slow cooker.
Have picked baby artichokes from garden so will cook these also.
