Ginger bread biscuits - Quirky Cooking pg 179

I made these on the weekend. Some of my spices were a bit old but still the biscuits had a lovely flavour.  Have frozen some of the dough so will be interesting to see how they cook up - don't think there will be any problems.  A nice biscuit and worth making.

I love these biscuits!!  Was very wary of the smell of the dough (cooking with molasses is new for me) but I cooked them up and dipped them in dark chocolate=ah-mazing.  Loved the spice (black pepper!) and found them to be perfect goldilocks texture- not too crunchy, not too chewy!   The 5 year old complained bitterly that I ate them all (oops) so I will be cooking another batch this weekend.

I'm off tomorrow to visit a friend who's had a hip replacement so I made these as a get well gift ;D She's also a Coeliac so a perfect choice.
The kitchen smelt wonderful while they were cooking.
