I made the full quantity of 2 serves of this as it's hard to halve 3 eggs.  I preferred the thickness and size of the omelette from the tray rather than the smaller, thicker one from the varoma dish and I would thicken the mushroom sauce with a small quantity of cornflour slurry next time, it was a little too runny for a sauce.  I used half Swiss Brown and button mushrooms but this part of the recipe could be doubled.  Interesting idea and easy to make.

I made this dish this morning.  I have never steamed eggs before, happy with the taste - about time i tried it! I thickened the mushrooms with corn flour, I thought they were far too runny. I don't know if I will make again, it is the type of recipe that is very easy and quicker to cook on the stove. My visitor really enjoyed them.
