Title: raw recipes - Honey Sesame delights
Post by: greenie on March 05, 2009, 04:41:11 am
I thought I would post some raw recipes here, since I am assuimg people looking at veg recipes will be most interested in raw vegan recipes

Name of Recipe:Honey Sesame delights
Number of People:depends how much you like them!
Ingredients:2 cups sesame seeds (can used unhulled - they'll just be more bitter)
2tsp vanilla extract
2-4 Tblspns unfiltered, unpasteurised honey to taste

Preparation: blend seeds on speed 10 for 1 min or until they form a paste.  You may need to scrape down the sides a couple of times
add vanilla and honey and blend on speed 7 for a few seconds to combine
scoop out heaped teaspoons and mould into balls (you can also set it as a slice in a square slice tin, then cut once it has cooled and 'set' in the fridge)
refrigerate to set

Made these yesterday.
Next time i would use unhulled sesame seeds as even with the huge amount of honey it was almost unedible due to bitterness.
I would also not wizz the seeds so much and leave them partially whole.
Instead of rolling balls i rolled it flat between the silpat to make a slice. Hoping that is would seed hard like the comercial sesame snaps. But unfortunatly it was still very soft so was hard to cut into squares with out it breaking up.

Might try them again some time with unhulled seeds and see if i like it more.

Just wonder if the sesame seeds were rancid?  The unhulled will be MORE bitter.

Maybe dry roast them gently first?

Yes, they are a soft, chewy texture and you need hulled sesame seeds
